Steps:

  • Peel potatoes and cut into 1/4-inch matchsticks. Heat oil to 300 degrees F. "Blanch" fries for 2 minutes and let cool. Heat oil to 350 degrees F. Fry for 3 minutes, or until fries are brown and rise to the top. Sprinkle with the spice blend.
  • Toss all the spices together in a large bowl. Store in an airtight container.

Steps:

  • Preheat oven to 450°F With aluminum foil or parchment paper, line a cookie sheet.
  • In a medium bowl, combine sweet potatoes with olive oil and seasonings. Mix well to evenly coat potatoes. Place potato strips on the foil or parchment lined cookie sheet and leave space between strips for even baking.

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the sweet potato chunks into a large mixing bowl. Drizzle with the olive oil, then sprinkle the brown sugar, paprika, black pepper, onion powder, garlic powder, poultry seasoning, chili powder, and cayenne pepper overtop.   • Combine sauce ingredients and set aside.
