SPICY TOFU CRUMBLES

Try these tossed into stir-fries, as a burrito filling, or folded into sautéed greens.

Spicy Tofu Crumbles image

Steps:

  • Arrange tofu slices in a single layer on a paper towel-lined plate and cover with a few more paper towels. Press down firmly on tofu with your hands to expel excess liquid.
  • Heat vegetable oil in a large skillet, preferably cast iron. Cook tofu, turning once, until browned, 7-10 minutes total. Transfer to a plate and let cool.
  • Meanwhile, whisk chile, soy sauce, mirin, Sriracha, vinegar, sesame oil, and ginger in a medium bowl to combine.
  • Crumble tofu into small pieces and add to bowl; toss to combine.
  • Crumbles can be made 5 days ahead. Cover and chill.

1 pound extra-firm tofu, sliced 3/4 inch thick
2 tablespoons vegetable oil
1 Fresno chile, thinly sliced
3 tablespoons soy sauce
2 tablespoons mirin
2 tablespoons Sriracha or gochujang (Korean hot pepper paste)
2 tablespoons unseasoned rice vinegar
2 teaspoons toasted sesame oil
1 teaspoon finely grated fresh ginger

Spicy Tofu Scramble image

Steps:

  • Place tofu onto a plate and place another plate on top. Set a 3- to 5-pound weight on top (a container filled with water works well). Press tofu for 20 to 30 minutes; drain and discard the accumulated liquid. Crumble tofu into 1/4-inch pieces.
  • Heat olive oil in a saucepan over medium heat. Add garlic; cook and stir until fragrant, about 2 minutes. Add mushrooms, scallions, and jalapeno; cook until softened, about 2 minutes. Stir in crumbled tofu and red pepper flakes. Cover and cook until flavors blend, about 4 minutes.
  • Season the tofu mixture with salt and pepper. Stir in tomatoes and 3 tablespoons cilantro; cook and stir until tomatoes are just heated through, about 2 minutes. Spoon tofu scramble onto 2 plates; sprinkle queso fresco on top. Garnish with the remaining cilantro.

SPICY SCRAMBLED TOFU

This is the first recipe I've ever devised myself, and I was really happy with it. It's perfect for when you've used half a package of tofu on last night's dinner for two and you have some left over for breakfast. It could be doubled or quadrupled depending on who you're feeding.

Steps:

  • Heat oil on high. Add tofu, salt and pepper to taste, and curry paste. Scramble as you would eggs for 2-3 minutes.
  • Slice avocado, toss with a little lemon juice, and serve on the side. Crumble cheese on top of the tofu and serve.

Mabu Dofu (Spicy Tofu) image

Steps:

  • Press tofu and cut into small cubes.
  • Mince onion, garlic, and ginger root.
  • Mix water, miso, sugar, sake, salt, and bouillon in a bowl.
  • Heat oil in a wok and saute onion, garlic, ginger, and red pepper flake.
  • Add ground pork in the wok and saute.
  • Add miso mixture in the wok and bring to a boil.
  • Add tofu and simmer on medium heat for 10 minutes.
  • Mix cornstarch with 1 tbsp of water and pour into the wok.
  • Stir carefully and pour sesame oil.
  • Serve with rice or noodles and enjoy!
