SPINACH LASAGNA

Spinach Lasagna image

Steps:

  • Heat the EVOO in a saucepot and add the butter. Add the garlic and cook, stirring, for 2 minutes. Add the tomatoes and crush them up a bit. Add the passata, a fat handful of torn basil leaves, the onion and some salt and pepper. Bring to a simmer and simmer for 40 to 45 minutes. Remove the onion and set the sauce aside.
  • Separate the spinach while adding it to a mixing bowl. Add half of the mozzarella, the ricotta, 1 1/2 cups of the Parmigiano-Reggiano and the eggs yolks and mix to combine. Season with grated nutmeg, salt and pepper.
  • Layer a little sauce into a lasagna pan and top with three flat lasagna sheets or four curly. Top with a little more sauce, and then half of the spinach and cheese mixture. Repeat with another layer, and end on top with lasagna sheets. Top with some sauce and the remaining mozzarella and Parmigiano-Reggiano.
  • The lasagna can be stored before or after baking for a make-ahead meal, or baked to serve immediately. When baking the first time, bake at 375 degrees F, uncovered, from room temperature until cooked through and brown and bubbling on top, 60 to 70 minutes. If reheating, bake at 375 degrees F, covered, for 40 to 45 minutes.
  • Let the lasagna rest 20 minutes before cutting. Serve with extra sauce on the side.

Two 28-ounce cans San Marzano tomatoes
2 cups passata or tomato sauce

Simple Spinach Lasagna image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large pot over medium heat saute spinach, onion, oregano, basil and garlic in the olive oil. Pour in spaghetti sauce and water; simmer 20 minutes. In a large bowl mix cottage cheese, mozzarella cheese, Parmesan cheese, parsley, salt, pepper and egg.
  • Place a small amount of sauce in the bottom of a lasagna pan. Place 4 uncooked noodles on top of sauce and top with layer of sauce. Add 4 more noodles and layer with 1/2 sauce and 1/2 cheese mixture, noodles and repeat until all is layered, finishing with sauce.
  • Cover with foil and bake in a preheated oven for 55 minutes. Remove foil and bake another 15 minutes. Let sit 10 minutes before serving.

  • Preheat oven to 350°. Mix first 7 ingredients., Spread 1/2 cup pasta sauce into a greased 13x9-in. baking dish. Our Favorite Lasagna with Sausage, Spinach, and Three Cheeses image

Steps:

  • Preparation:
  • Position the rack in the upper third of the oven and preheat to 375°F.
  • Make the sauce:
  • In a large pot over medium-high heat, heat the oil. Add the sausage, onion and 3/4 teaspoon salt and 1/4 teaspoon pepper; cook, breaking up sausage with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Reduce heat to medium and add garlic, red-pepper flakes, and tomato paste; cook, stirring often, until fragrant, 1 to 2 minutes more. Add tomatoes (along with their juice) and oregano; bring to a simmer, and cook, breaking up the tomatoes with a wooden spoon until in small pieces, about 5 minutes. Taste and adjust seasoning, adding more red-pepper flakes if desired.
  • Make the filling:
  • In the bowl of a food processor, combine all of the filling ingredients and process until mostly smooth.
  • Assemble the lasagna:
  • Squeeze the spinach in a paper towel or clean dishcloth until very dry. Transfer to a bowl and season with a pinch of salt.
  • Coat baking dish with cooking spray and spread the bottom with 2 cups sauce. Top with a layer of three noodles, then a third of the ricotta mixture (about 1 1/3 cups), and a third of the spinach (about 2/3 cup). Sprinkle with 1 cup grated mozzarella.
  • Repeat twice more, skipping the mozzarella on the third layer. Top the lasagna with the remaining sauce. Sprinkle the remaining 2 cups mozzarella in clusters so some of the sauce peeks through.
  • Place the baking pan on a rimmed baking sheet. Lightly spray a piece of foil with cooking spray, cover the lasagna, and bake for 45 minutes. Remove the foil and continue baking until lightly browned and bubbly, about 20 minutes more. Let cool at least 10 minutes before serving.
  • DO AHEAD: The sauce can be prepared up to 2 days in advance and refrigerated. The filling can be prepared up to 1 day in advance and refrigerated.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
  • In a skillet over medium-high heat, cook mushrooms, onions, and garlic in olive oil until onions are tender. Drain excess liquid and cool. Boil spinach for 5 minutes. Drain, then squeeze out excess liquid. Chop spinach.
  • Combine ricotta cheese, Romano cheese, spinach, salt, oregano, basil, pepper, and egg in a bowl. Add cooled mushroom mixture. Beat with an electric mixer on low speed for 1 minute. Spinach and Shiitake Lasagne with Caramelized Garlic-Basil Sauce image

Steps:

  • Preheat oven to 350 degrees. In a hot skillet coated with oil, saute garlic, ginger, onions and season. Add shiitakes and stir. Season then deglaze with juice. Check for seasoning. Mix shiitakes with spinach. Toss with olive oil, vinegar and season. In a sprayed lasagne dish, spread some spinach mixture then top with noodles. Top with spinach mixture then some yogurt then more noodles. Repeat finishing with spinach on top and drizzle some olive oil. Sprinkle with cheese and bake in oven for 1 hour. Should be screeching hot. Broil if necessary to brown. Let rest 8 minutes before cutting.
  • For the Vinegar Syrup: In a non-reactive saucepan, combine vinegars and simmer. Reduce by 60 to 70 percent until a syrup is achieved. Keep in mind that the syrup will thicken as it cools. Reserve at room temperature.
  • In a hot saucepan coated with olive oil, caramelize garlic and onions. Season and sprinkle on sugar. When brown, about 6 to 8 minutes, add stock and bring to a boil. Check for seasoning, should be salty like blanching water. Add basil and spinach and blanch for 2 minutes. Transfer to blender and lift with butter. Verify flavor.
  • PLATING Sauce plate with sauce and zig-zag syrup. Slice square of lasagne and place on top. Garnish with vinegar syrup.

Traditional Italian Spinach Lasagna image

Steps:

  • Saute the onions and garlic in a heavy iron pot in olive oil, until translucent, then remove from pot, and set aside.
  • Put sausage in pot with ground fennel and brown.
  • Add basil, oregano, and parsley.
  • Stir in onions and garlic, as well as tomatoes, tomato sauce and paste.
  • Let simmer gently about 2-3 hours.
  • Boil lasagna noodles according to package directions, and hang to dry.
  • Beat together eggs, ricotta and parmesan cheese, set aside.
  • Build lasanga:.
  • Barely cover bottom of large, deep lasagna pan with sauce.
  • Place a layer of noodles lengthwise over sauce.
  • Place all of spinach over noodles.
  • Cover this with a layer of noodles shortwise.
  • Spread ricotta cheese mixture over noodles, and cover this with a lengthwise layer of noodles.
  • Put one half of remaining sauce over noodles and cover with shortwise noodles.
  • place mozzerella cheese over noodles into a somewhat solid sheet and cover with lengthwise noodles.
  • Pour remaining sauce over top.
  • Bake at 350 degrees for about 40 minutes, or until bubbly.
  • Grate hard cheese over top as soon as you pull it from the oven.
  • Serve with Italian bread and a salad.

Lasagna with Spinach and Basil Sauce image

Steps:

  • PREPARE SPINACH AND BASIL TOMATO SAUCE: Brown beef in large stock pot until brown. While beef is browning, dice onion and mince garlic. Then drain beef in a colander to remove grease. Put diced onions and minced garlic into pot on simmer. Allow to simmer until onions are translucent, keeping careful not to burn. Then pour in ground beef, tomato sauce, diced tomatoes, and tomato paste. Stir well. Introduce herbs and sugar to pot. Measurements are approximate. Taste sauce to adjust. Add spinach after thawing. Allow sauce to simmer for 30 minutes. Remove bay leaf. Set aside.
  • PREHEAT oven to 350 degrees F. Boil lasagna noodles for 10 minutes and then strain. Beat one egg and then combine with cottage cheese.
  • LAYER an even layer of sauce onto bottom of 13x9 baking dish. Top with 3 lasagna noodles. Then layer with an even covering of cottage cheese mixture. Then sprinkle with Italian cheese. Repeat 1-2 times, ending with a layer of cheese.
  • BAKE for 45 minutes or until cooked through. Let stand before serving.

  • Sauce:
  • Heat oil in heavy large pot over medium-high heat. Add sausages, onion, garlic, oregano and crushed red pepper and sauté until sausage is cooked through, mashing sausage into small pieces with back of fork, about 10 minutes. Add crushed tomatoes and diced tomatoes with juices. Bring sauce to boil. Reduce heat to medium and simmer 5 minutes to blend flavors. Season with salt and pepper. (Can be made 1 day ahead. Chill until cold, then cover and keep chilled.)
  • Filling:
  • Using on/off turns, chop fresh basil leaves finely in processor. Add ricotta, mozzarella, Parmesan, egg, 1/2 teaspoon salt and 1/4 teaspoon pepper. Using on/off turns, process filling until just blended and texture is still chunky.
  • Assembly:
  • Preheat oven to 375°F. Spread 1 1/4 cups sauce in 13x9x2-inch glass baking dish. Arrange 3 noodles on sauce. Drop 1 1/2 cups filling over noodles, then spread evenly to cover. Sprinkle with 3/4 cup mozzarella cheese and 1/4 cup Parmesan cheese. Repeat layering of sauce, noodles, filling and cheeses 2 more times. Top with remaining 3 noodles. Spoon remaining sauce atop noodles. Sprinkle with remaining cheeses. Spray large piece of foil with nonstick olive oil spray. Cover lasagna with foil, sprayed side down.
  • Bake lasagna 40 minutes. Carefully uncover. Increase oven temperature to 400°F. Bake until noodles are tender, sauce bubbles thickly and edges of lasagna are golden and puffed, about 20 minutes. Transfer to work surface; let stand 15 minutes before serving.

Leftovers are yummy the following day, if you are fortunate enough to have any. NOTE: Please do not alter the liquid to solid ratio. Just follow the easy instructions for perfect lasagna, every time. P.S. Recipe can be made ahead; use a disposable aluminum pan and bake, freeze and reheat all in the same pan. Or, you can assemble the lasagna without baking it and then freeze it, baking it on the day it will be served. Enjoy!

Spinach Lasagna (Easy No-Boil Method) image

Steps:

  • Preheat oven to 350 degrees F.
  • In large skillet or stock pot, brown ground beef and onion; drain.
  • Stir in spaghetti sauce. Simmer 10 minutes (to heat through), stirring occasionally.
  • In medium bowl, combine mozzarella cheese, fresh or frozen spinach, ricotta cheese, eggs and garlic powder; stir until well blended.
  • In 13-by-9-inch baking dish, layer 1/2 of the uncooked lasagna noodles, 1/2 of the meat mixture, all of the spinach mixture, remaining half of noodles and meat sauce. Pour the 1/3 cup of water over lasagna. Cover snugly with foil.
  • Bake covered at 350 F for 45 minutes.
  • Remove foil from lasagna; sprinkle with Parmesan cheese.
  • Bake, uncovered, an additional 10 to 15 minutes or until hot and bubbly and noodles are tender.
  • Let stand 10 minutes before serving. Yields 8 servings.
  • Serve with a tossed salad, Mom's Onion Parmesan Bread #109257 and a nice bottle of red wine (such as Italian Chianti, Lambrusco, or Red Rose). Any leftovers are great reheated the next day.
