Steps:

  • Combine above ingredients except bread and chill.
  • Cut out center of bread into cube size pieces for dipping.
  • Fill center with dip and serve.

1 cup low-fat plain Greek yogurt
4 green onions, chopped
1 (10 ounce) package frozen spinach, finely chopped, squeezed and drained of liquid
1 (8 ounce) can water chestnuts, finely chopped
1 cup low-fat mayonnaise
1 (2 1/3 ounce) package Knorr vegetable soup mix
1 loaf pumpernickel bread or 1 loaf sourdough bread

Spinach Dip (Lighter Version) image

Steps:

  • In med. saucepan over low heat, add olive oil and minced garlic; saute 1 minute. Add milk and cheese, stir constantly until melted & well blended. Remove from heat; stir in mayo & sour cream. Fold in spinach. Return to low heat, add lemon juice & spices. Stir to blend well. Transfer to an ovenproof dish sprayed with nonstick spray. Top with more shredded cheese if desired. Bake at 325 for 15-20 minutes or until bubbly.

  • In a microwave-safe bowl, combine spinach and water. Cover and microwave on high for 45-60 seconds or until wilted; drain. Cool slightly and squeeze dry. , In a small bowl, combine the water chestnuts, sour cream, mayonnaise, soup mix, onion and spinach. Chill for at least 1 hour. Serve with crackers.

  • In a medium bowl, mix together mayonnaise, sour cream, dry leek soup mix, water chestnuts and chopped spinach. Chill in the refrigerator 6 hours, or overnight.
  • Remove top and interior of sourdough bread. Fill with mayonnaise mixture. Tear removed bread chunks into pieces for dipping.
