EVERYONE'S FAVORITE SPINACH SALAD WITH POPPY SEED DRESSING
This recipe quickly becomes the favorite of pretty much everyone that tries it. It's so tasty, it's easy to make, and the ingredients are interchangeable! You can use the dressing immediately or make it in advance and store in refrigerator up to a couple of days. I have substituted pears and mandarin oranges for the strawberries and feta instead of blue cheese. Be creative! YUM!

I like this salad because it isn't fruity like many spinach salads out there. My cousin always brings this to family dinners and everybody loves it, even the ones that don't like spinach! Be sure to make the dressing the night before! The original recipe called for 1 lb. of swiss cheese. I think that's a bit much and usually make it with 1/2 lb.

- Make the dressing: Put the oil, vinegar, honey, mustard, egg, 1/2 teaspoon salt and 1/4 teaspoon pepper in a blender and blend until smooth. Stir in the poppy seeds. Refrigerate until ready to serve.
- Make the salad: Put the strawberries in a nonreactive heatproof bowl. In a small saucepan over medium heat, combine the vinegar, 1/2 cup water, the bay leaf, sugar, 1 teaspoon salt and 1/4 teaspoon pepper. Bring to a low boil and allow the sugar to dissolve. Pour over the strawberries and let stand about 20 minutes. Remove the bay leaf and drain the strawberries, discarding the liquid.
- In a large salad bowl, combine the spinach, red onion, mushrooms and pickled strawberries. Pour the dressing over the salad, toss well and serve immediately.

- SALAD - Drain oranges, place into a bowl and set aside.
- Cube apples and place in a bowl.
- Pour lemon juice over; mix well to coat to prevent from turning brown and let marinate for about 1 hour or longer.
- Before using apples, drain any excess lemon juice.
- Prepare spinach and Romaine lettuce; dry on paper towels, and add to a large bowl.
- Add ice cubes and let chill for at least 1/2 hour to crisp.
- DRESSING - In a glass jar with lid, add orange juice, balsamic vinegar, olive oil, honey, poppy seeds, Dijon mustard, salt, and pepper; shake well to blend.
- TO SERVE - Remove ice from the greens and discard; drain any water.
- Add apples and pine nuts and toss to mix well.
- Add dressing mixture and toss to coat well.
- Arrange spinach on individual salad plates and top with 3 or 4 Mandarin orange segments.
- This dressing is also very good with young, mixed greens.
MANDARIN SPINACH SALAD WITH POPPY SEED DRESSING
Uses avocado, bacon and onion as well. This salad gives a lot of flavor for an easy effort. When serving this I get all the ingredients ready ahead of time, keeping them separate. Then toss everything together just before serving.
