EASY FRUIT COBBLER WITH SPLENDA

This is a variation of recipe #73927 but made with splenda. I've made this with blackberries, strawberries and blueberries and it came out great.

Easy Fruit Cobbler With Splenda image

Steps:

  • Combine all of the ingredients except the fruit in a bowl.
  • Pour it into an 8x8 pan coated with cooking spray.
  • Add the fruit right on top.
  • The crust will come up over the fruit and cover it.
  • Bake in a 350 degree oven for 40 minutes.

1/2 cup Splenda granular
1/2 cup flour
1/2 cup skim milk
1 teaspoon baking powder

Steps:

  • Preheat oven to 350*F.
  • Melt the margarine in 9 x 13 inch pan, only enough to cover the bottom, let cool Stir together flour, splenda, baking powder, and salt.
  • Gradually mix in the milk and vanilla (the batter may be thick, don't add more milk or water!) Pour the batter into the pan over the margarine (don't stir).
  • sprinkle with half of the cinnamon.
  • place the apples ontop of the batter.
  • sprinkle with remaining cinnamon.
  • (don't mix) Bake in the oven for 30-50 minutes, or until golden brown and bubbly.
  • Enjoy with some fat free vanilla ice cream!

1 1/4 cups all-purpose flour
2/3 cup Splenda sugar substitute
1 tablespoon baking powder
1/4 teaspoon salt
1 cup skim milk or 1 cup low-fat soymilk (has a slight taste though)
1/2 teaspoon vanilla
4 cups golden delicious apples or 4 cups gala apples, cored and sliced thinly (or other fave variety)
1/2 tablespoon 40% fat margarine (stick)
cinnamon (about 3/4 TSP)

Steps:

  • Preheat oven to 350. Lightly spray an 8x8x2-inch square baking dish with nonstick cooking spray. Set aside.
  • Filling: Combine Splenda, flour, and cinnamon in a large bowl. Add apples, tossing to coat. Spoon into prepared pan. Set aside.
  • Topping: Combine oatmeal, flour, Splenda, and walnuts in a bowl; stir in butter. Mixture will be crumbly. Spoon over apple mixture.
  • Bake 45 minutes or until apples are bubbly and topping is golden brown. Serve warm.

Steps:

  • Preheat the oven to 375 degrees F.
  • Coat an 8-inch square baking dish with cooking spray; set aside.
  • Whisk together SPLENDA® Granulated Sweetener, flour, cinnamon, apple juice, lemon juice, and lemon zest in a medium bowl; set aside.
  • Melt butter in a large nonstick skillet over medium-high heat; add apples and cook, stirring often, until softened, 8 minutes. Stir in apple juice mixture and bring to a boil; stir in raisins, if desired. Spoon apple mixture into prepared baking dish.
  • Topping Instructions: Combine flour, SPLENDA® Granulated Sweetener, baking powder, baking soda, and salt in the bowl of a food processor; add butter and pulse until mixture resembles coarse meal. Steps:

  • Preheat oven to 325°F; GREASE and flour a 10-inch tube pan or a 12-cup BUNDT pan; set aside.
  • Combine flour, Splenda Sugar-Blend for baking, and soda in a large mixing bowl; cut butter into flour mixture with a fork or a pastry blended until crumbly, (this procedure may be done with a mixer at the lowest speed, cover mixing bowl with a tea towel to prevent spattering, I have a guard that fits on my mixer bowl-Kitchen Aid).
  • Combine eggs, sour cream, and vanilla in a small mixing bowl; add 1/4 of the egg mixture to flour mixture; beat on low speed of an electric mixer until blended; beat at medium speed for 30 seconds or until batter is smooth, stopping to scrap down sides of bowl; REPEAT PROCEDURE 3 times.
  • Spoon batter into prepared pan; Bake for 1 hour and 20 minutes or until a tooth pick inserted in center comes out clean, cool in pan on a wire rack 10 minutes; remove from pan, cool completely on a wire rack.
