SPRING PEA SOUP

Want a tasty, textured pea soup that tastes like springtime? You have to start in the freezer section of the supermarket to get the best results. I like frozen peas to build the base of the soup and then enrich it, last minute, with some fresh peas. Lots of people add bacon or Parmesan to garnish, and that's all fine to me, but I largely prefer the crunch of fresh peas or pea tops (a true sign of spring) and a dollop of sour cream. Use whatever peas are at the supermarket, sugar snap or snow peas.

Steps:

  • In a large, heavy-bottomed pot, heat the oil over medium heat. Add the scallions and a generous pinch of salt and pepper. Cook until the scallions are tender, 2 to 3 minutes, then add the peas, stock and 1 cup of water. Bring to boil, then simmer over medium heat and cook for about 5 minutes to allow the peas to soften further.
  • Using a jar blender, carefully puree the soup until smooth (see Cook's Note). Pour the soup back into the pot, then add the sour cream and honey, and gently warm for 1 to 2 minutes. Taste for seasoning. Garnish the bottom of each serving bowl with the fresh pea slices and basil leaves. Ladle the soup on top and serve.

2 tablespoons extra-virgin olive oil
6 scallions, minced
Kosher salt and freshly ground black pepper
Two 10-ounce packages frozen peas, thawed
2 cups chicken stock
1/2 cup sour cream
2 teaspoons honey
1 cup sugar snap or snow peas, cut crosswise into 1/2-inch slices
Leaves picked from 6 to 8 stems fresh basil

Steps:

  • Make the dressing: Whisk together the vinegar, mustard, olive oil, hazelnut oil, pepper, shallot and salt to taste in a small bowl. Adjust the seasonings. Set aside.
  • Make the salad: Bring a large pot of water to a boil. Season with salt until the water tastes slightly of salted broth. Prepare an ice bath.
  • Blanch the English peas and snap peas separately, for about 10 seconds each. Shock in the ice water and drain on paper towels. Cut the snap peas into thirds.
  • In a medium skillet, heat the olive oil over low heat. Tear the Jamon Serrano slices into bite-sized pieces and add to the oil in the skillet. Cook until crispy on both sides, 2 to 3 minutes total. Remove to a paper towel-lined plate to drain.
  • Assemble the salad: Toss the English peas, snap peas, pea shoots and snow peas with the vinaigrette to taste. Plate the salad and top with the Manchego, toasted hazelnuts and crispy jamon.

1/4 cup chardonnay vinegar
2 tablespoons Dijon mustard
2 tablespoons extra-virgin olive oil
2 tablespoons hazelnut oil
1/4 teaspoon finely ground black pepper
1 shallot, finely minced
Kosher salt
Kosher salt

3 tablespoons extra-virgin olive oil
8 slices Jamon Serrano
2 cups pea shoots
1 cup snow peas, julienned lengthwise
1/4 cup grated Manchego
1/4 cup toasted hazelnuts, crushed

  • Peas with Mushrooms and Onions. Dress up the humble green pea with earthy sliced mushrooms and assertive onion rings, then cook it all together in a luscious creamy dressing.
  • Spring Peas with Sumac and Feta. Dress up fresh spring peas with salty feta cheese and citrusy sumac for a delightfully different preparation. The creamy cheese contrasts beautifully with the light snap of boiled peas and plenty of spice will entice even picky eaters to clean their plates.
  • Homemade Mushy Peas. In the United Kingdom, fish and chips or savory pie often comes with a side of mushy peas. While many recipes call for frozen green peas, the traditional version uses marrowfat peas.
  • English Pea Pesto Pasta with Ham. The fresh sweetness of English peas makes a delightful addition to basil pesto. Toss linguini or other thin pasta with some diced ham and the pesto for a lovely, filling spring supper.
  • Minted Pea Puree. Serve this herbaceous pea puree atop crostini or crackers for a light and fresh appetizer that will start any party off on the right foot.
  • Easy Creamed Peas. To dress up frozen green peas, look no further than this creamy preparation that makes an easy-but-satisfying side dish. This recipe comes together quickly with ingredients you likely have on hand, and tastes great with a little mild cheddar cheese or Parmesan added in.
  • Green Pea Salad with Creamy Dressing. For a simple and delicious picnic salad, reach for fresh or frozen green peas. It looks as pretty as it tastes with crunchy shredded carrot, sweet red bell pepper, zesty red onion, and crisp celery.
  • Classic Split Pea Soup. Nothing beats a warm bowl of split pea soup on a drizzly evening, and this slow-simmered version with ham will really hit the spot.
  • Speedy Green Pea Soup. When you have a taste for green pea soup but don't have all day, try this quicker version. It uses frozen green peas instead of dried split peas, which require soaking before use.
  • Fresh Carrots and Sugar Snap Peas. Hit the farm stand for tender sugar snap peas and carrots that braise gently in butter and garlic to create a quick and tasty side dish.
