LEMON-PEPPER OVEN FRIES

Flavored with lemon, garlic, oregano and pepper, these are a quick, easy and refreshing change from ordinary potatoes. They are a perfect accompaniment to many dishes, and take no time at all to put together for a nice weeknight supper.

Lemon-Pepper Oven Fries image

Steps:

  • Preheat oven to 425 degrees F.
  • Wash but don't peel potatoes.
  • Quarter potatoes lengthwise, then cut quarters in half (also lengthwise)- or cut in 1/4-inch slices.
  • Toss potatoes with oil, lemon juice, salt, pepper, lemon zest, garlic and oregano.
  • Spread potato wedges on a shallow, lightly oiled baking sheet and bake for about 35 minutes, or until tender but crisp and browned around the edges.
  • Correct seasoning.
  • To serve, I like to squeeze more lemon juice on the potatoes just before serving!

4 medium baking potatoes
2 tablespoons olive oil
1 teaspoon salt
3/4 teaspoon fresh coarse ground black pepper
1 teaspoon finely grated lemon, zest of
3 tablespoons lemon juice
1 clove garlic, minced
1 tablespoon dried oregano

MONTREAL SEASONED OVEN FRIES

This is a recipe I litally threw together in a pinch to accompany burgers flavored with montreal steak seasoning. The fries turn out tender on the inside and crispy on the outside with the flavors of montreal steak seasoning. Please be warned, though, that these are lightly salty. DH and I enjoy a bit of saltiness, so that wasn't a problem for us.

Montreal Seasoned Oven Fries image

Steps:

  • Preheat oven to 375°F.
  • Scrub potatoes and slice into 1/2" x 1/2" wide strips.
  • Place potatoes in a shallow roasting pan. Drizzle with olive oil and sprinkle with montreal seasoning. Then toss with hands to coat throughly.
  • Roast for 35-40 minutes or until potatoes are tender and lightly browned.

4 white potatoes, medium, skins on, cut into 1/2-inch x 1/2-inch wide strips
2 tablespoons olive oil
1 tablespoon McCormick's Montreal Brand steak seasoning

EASY EXTRA-LEMONY HOLLANDAISE SAUCE

No double-boiler, no blender, and va-va-voom flavor! This extra-lemony hollandaise is fantastic over asparagus or eggs Benedict, and a great complement to salmon or other fish. Gutsy enough to stand up to red meats for a variation on steak Oscar, too!

Easy Extra-Lemony Hollandaise Sauce image

Steps:

  • Whisk egg yolks and water together in a small saucepan over low heat. Slowly whisk in melted butter. Cook, stirring constantly, until sauce begins to thicken, 8 to 10 minutes. Slowly add lemon juice, stirring until incorporated. Cook until sauce achieves desired thickness, 3 to 5 minutes more. Serve immediately.
