Steps:
- Wash the clams thoroughly and remove any blemishes. They should have no odor. Heat oil in a large saucepan (with a cover) over medium heat and cook garlic and onion until translucent. Add the wine and let cook for a couple of minutes to combine the flavors. Add the clams and clam juice (or water) and cover the pan for about 10 minutes until the clams open. Discard any clams that do not open and remove clams to serving bowls. Season the juices in the pan with salt and pepper to make a sauce. Pour the sauce and melted butter over the clams.

- In a large pan saute garlic and chili in oil. Add wine, fish sauce, sugar, oyster sauce, and pepper to pan, bring to a boil. Add clams and cover; cook until clams open about 5- 10 mins. Toss in basil . Serve in bowl with cooking liquid.

- Heat wok over high heat and add oil. Stir-fry the garlic until aromatic, then add nam prik phao and bird's eye chilies. Continue stirring for 1 minute and add clams into the wok. Stir-fry until the clams open, then add Thai basil leaves, fish sauce and sugar to taste. Do a few quick stirs, dish out and serve immediately with steamed white rice.
