STEFANO'S CHEESY FAN POTATOES
Saw this recipe from Canada---made it for company, and it was a big hit.

Steps:
- Preheat oven to 425 degrees. Line 9-inch x 13-inch baking dish with parchment paper.
- Combine butter, garlic, 1/2 cup cheddar, Parmesan cheese, and salt and pepper. Set aside.
- Without cutting all the way through, make 1/4-inch slices into the potato.
- Spoon butter mixture onto potatoes and transfer to baking dish. Cover and bake until potatoes are just tender, about 1 hour to 1 hour and 10 minutes.
- Uncover and drizzle about 2 heaping teaspoons whipping cream over top of each potato and then sprinkle with remaining 1 cup cheddar.
- Bake until potatoes ae fork tender and cheese melts, about 15 to 20 minutes more.
- Garnish with chives and serve with sour cream.

- With a sharp knife, slice potatoes thinly but not all the way through, leaving slices attached at the bottom. Place potatoes in a greased shallow baking dish. Sprinkle with salt; brush with 1/4 cup butter. Bake, uncovered, at 425° for 30 minutes., Brush potatoes with remaining butter and sprinkle with bread crumbs. Bake 20 minutes longer. Sprinkle with Parmesan cheese. Bake 5-10 minutes more or until potatoes are tender and golden brown.

- Preheat oven to 425°. With a sharp knife, cut each potato crosswise into 1/8-in. slices, leaving slices attached at the bottom; fan potatoes slightly and place in a greased 13x9-in. baking dish. In a small bowl, mix butter, salt and pepper; drizzle over potatoes., Bake, uncovered, 50-55 minutes or until potatoes are tender. In a small bowl, toss cheeses with herbs; sprinkle over potatoes. - 1. Preheat oven to 350 F. Spray casserole dish with cooking oil spray or grease casserole dish with shortening.
- 2. Saute onion in butter.
- 3. Add 1/4 cup flour, salt, mustard, and pepper to onion and butter.
- 4. Gradually add milk/cream whisking to make a nice white sauce. Stir and cook until thick.
- 5. Add shredded cheese, potatoes and ham (if so desired). Stir all ingredients together. Add a bit more milk if needed. The potatoes will absorb some of the milk so you may need a little more.
- 6. Pour into greased casserole dish. Bake uncovered in oven for about 30 min. Then, spread more cheese on top and bake for 10-15 min longer before removing from oven.
- 7. ENJOY! These are very cheesy and rich, yummy.

- Heat oven to 400°F.
- Place potatoes on microwaveable plate; prick each in several places with fork. Microwave on HIGH 8 to 10 min. or until tender, turning and rearranging every 3 min. Cool 10 min.
- Make 7 to 9 diagonal cuts in top of each potato, cutting about 3/4 of the way into potato. Place, cut sides up, on baking sheet sprayed with cooking spray. Gently spread slices of 1 potato slightly apart; brush with 1 Tbsp. dressing. Repeat with remaining potatoes and dressing.
- Bake 15 to 18 min. or until potatoes are lightly browned. Top with cheese; bake 1 to 2 min. or until melted. Sprinkle with onions.
