TO DIE FOR BLUEBERRY MUFFINS
These muffins are extra large and yummy with the sugary-cinnamon crumb topping. I usually double the recipe and fill the muffin cups just to the top edge for a wonderful extra-generously-sized deli style muffin. Add extra blueberries too, if you want!

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
- Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and add enough milk to reach the 1-cup mark. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
- To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
- Bake for 20 to 25 minutes in the preheated oven, or until done.

I have had this recipe forever, it seems. I may try new recipes, but this is THE ONE recipe I always make! We pick wild blueberries every August, so our freezer has an abundance of BBs all year - perfect!

Steps:
- Preheat oven to 400°F.
- Line muffin cups with paper cups or grease (12 regular muffins); (I make 6 regular-size muffins, then make a dozen small muffins for my young children).
- In a large bowl, combine oats and orange juice; stir well.
- Combine flour, 1/2 cup sugar, baking powder, baking soda and salt, oil& egg; mix well with oats and OJ.
- Stir in Blueberries.
- Fill cups 2/3 full.
- Blend 2 TBSP sugar and cinnamon; sprinkle on muffins.
- Bake at 400F for 18-22 minutes or till golden brown.
- Easily frozen.
- I imagine you could use other berries, as well.

BLUEBERRY MUFFINS
These delicious muffins-bursting with blueberries, and with crunchy, sugary tops-are perfect for breakfast or with coffee any time of day.

- Preheat the oven to 375 degrees. Butter large (3 3/4 inches) or small (2 3/4 inches) muffin tins, and set aside. In a large bowl, sift together flour, baking powder, and salt; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until fluffy, about 3 minutes. Add egg, egg yolks, and vanilla; mix until well combined. Reduce speed to low; alternate adding reserved flour mixture and milk to mixer, beginning and ending with flour. Remove bowl from mixer; gently fold in berries by hand. Divide batter among muffin tins; sprinkle generously with sugar. Bake until light golden, about 45 minutes for large muffins, about 30 minutes for small muffins. Cool in pan 15 minutes. Remove from pan; transfer to wire rack, and let cool completely.
SIMPLE BLUEBERRY MUFFINS
This recipe first appeared in The Times in a 1986 article by Nancy Harmon Jenkins that extolled the virtues, and the many delicious applications, of summer berries. There's nothing fancy about this muffin - it's mostly flour, eggs, butter and blueberries. But that's the beauty of it. It's the perfect sort of baking project to tackle on a lazy weekend morning. This recipe calls for blueberries, but feel free to substitute almost any ripe and sweet berry.

- Preheat oven to 425 degrees. Grease 12 muffin cups with a little butter.
- Sift together flour, salt, baking powder and sugar.
- Combine eggs, milk and melted butter. Stir into dry ingredients just until moistened. Do not try to beat until smooth because the muffins will be tough and grainy.
- Sprinkle 3 tablespoons of flour over blueberries, and turn to coat well. Stir into batter, mixing just enough to combine.
- Fill muffin cups about two-thirds full.
- Bake 20 to 25 minutes, or until muffins are brown and pull away from the sides of the tin.
