I was dying for a sweet sauce and craving curry, so I threw this together. My family swooned over it! We poured it over Jasmine rice and stir-fried vegetables. Yummy! It is adaptable for any cut of chicken cooked with any method. It's the last part of the cooking that counts!!

Steps:

  • Mix all sauce ingredients together in a small bowl.
  • Pour over chicken for the last 30 minutes of roasting, or if using other cooking method, use like you would bbq sauce.
  • Baste often.
  • Serve when chicken is cooked through and glaze is golden and bubbly.
  • Cook time does not include initial cook time for chicken.

Steps:

  • Preheat the grill to high and lightly oil a shallow heatproof dish. Put the chicken in the dish, skin side down, and season with salt and pepper. Grill for 5 minutes. While the chicken is grilling, cut four thin slices from the lemon.
  • Turn the chicken fillets over and put a slice of lemon on top of each one. Sprinkle over the thyme and a little more seasoning, then drizzle with the honey. Squeeze over the juice from the remaining lemon and spoon round 2 tbsp water. Return to the grill for 10 minutes more, until the chicken is golden and cooked all the way through. Serve the chicken and the sticky juices with rice or potatoes and a green veg - broccoli or leeks are good.

Steps:

  • Preheat oven to 200°C.
  • Place the chicken in a ceramic dish in a single layer.
  • In a seperate bowl, combine sauces, honey, garlic and 5 spice powder.
  • Pour over the chicken, turning to coat.
  • Cover and refrigerate for at 30-60 minutes.
  • Heat a frying pan over a high heat, and spray with olive oil. Cook the chicken in batches until golden.
  • Transfer to a baking tray, lined with baking paper, and brush with marinade.
  • Bake for 6-8 minutes until just cooked through.
  • Cover on a plate with foil and stand for 2 minutes.
  • Slice about an inch thick, and serve.

  • 1. Preheat oven to 400 degrees F. Lightly oil a 9×13 baking dish or coat with nonstick spray. 2. Season chicken with salt and pepper, to taste. Working in batches, dip chicken into eggs, then dredge in Panko, pressing to coat. 3. Add chicken to prepared baking dish. Place into oven and bake until golden brown and crisp, about 15-20 minutes. 4. In a medium saucepan over medium high heat, combine soy sauce, honey, garlic, hoisin sauce, ginger and Sriracha until slightly thickened, about 1-2 minutes. Looking forward to trying this one and wanted to save it first. I think we'll try it as a crock pot recipe as i've had lots of success roasting chickens that way. The recipe comes from Spark Recipes and looks yummy as well as healthy (go figure). Prep time includes marination overnight in fridge. :) Crockpot would be 8 hours on low rather than the 5 hours in the oven.

  • In a small bowl, thoroughly combine all the spices. Remove giblets from chicken, clean the cavity well and pat dry with paper towels. Rub the spice mixture into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin. Place in a re-sealable plastic bag, seal and refrigerate over night.
  • When ready to roast chicken, stuff cavity with onions, and place in a shallow baking pan. Roast, uncovered, at 250 F for 5 hours. After the first hour, baste the chicken occasionally (every half hour or so) with pan juices. The pan juice will start to caramelize on the bottom of the pan and the chicken will turn golden brown. If the chicken contains a pop-up thermometer, ignore it. Let chicken rest about 10 minutes before carving.
