SAUSAGE & SWEET POTATO TRAYBAKE
Serve up this sensational sausage and sweet potato traybake for an easy family meal. To make things even simpler, you can freeze it for busy weeknights

Steps:
- Heat the oven to 200C/180C fan/ gas 6. Mix together the ingredients for the spiced sauce in a bowl. Tip the onion quarters, corn, mango, sweet potatoes and sausages into a roasting tin, then pour over the sauce and stir to coat. Add a pinch each of salt and pepper.
- Bake for 45-50 mins, giving it a toss halfway through, until the sausages are cooked through and the sweet potato is soft. If freezing, leave to cool completely first. Can be frozen for up to one month. Defrost thoroughly before reheating in the oven at 200C/180C fan/gas 6 for 35-40 mins. Serve sprinkled with the coriander and chilli, if you like.

- Scrub potatoes; place in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender., For dressing, in a small bowl, combine the oil, honey mustard, vinegar and seasonings. Set aside. - Preheat oven to 425º. Place sweet potatoes and onion in 15x10x1-in. baking pan; drizzle with oil. Sprinkle with brown sugar and seasonings; toss to coat. Bake for 15 minutes. - Heat oven to 200C/180C fan/gas 6. Toss the onion and sausages with the oil in a shallow roasting tin. Bake for 25 mins, shaking the tin once for even browning.
- Meanwhile, boil potatoes for 12-15 mins until tender, then run under cold water and drain. Mix the mayo, yogurt, spring onions and sweetcorn. Thickly slice potatoes and stir through, then season.
- Turn up oven to 220C/200C fan/gas 7. Add chutney to the sausages and onions. Cook for 5 mins more, until sausages are cooked and sticky. Serve with potato salad.

- While heating your grill, prepare your vegetables. Peel both sweet potatoes and cut into 1/2 inch thick discs. Slice your bell pepper in half vertically, then once more so that you have 4 long pieces. Brush the vegetables with olive oil or avocado oil.
- Cook sausages and vegetables on the grill, turning about every five minutes. Your vegetables will be charred, and sausage should be cooked though.
- Chop up your veggies into small pieces, and sausage into bite size pieces. Place the salad ingredients with mixed greens into a large bowl, and add fresh cilantro and green onion.
- Whisk together the dressing ingredients into a small bowl: beer (if using), apple cider vinegar, garlic, honey, mustard, and oil. Pour over top the veggies and sausage.

- Preheat the oven to 425°F. Place the potatoes on a large baking sheet and drizzle with 1 tablespoon of oil. Toss with your hands to coat. Spread across the sheet and roast for 20 minutes.
- Slice the sausage in half, or into 3-inch sections. Slice the peppers and onions. Stir together the oil, garlic, paprika, salt, and pepper in a large mixing bowl. Add the sausage and vegetables to the bowl and toss with your hands to thoroughly coat everything with the spices. Set aside.
- When the potatoes have been in the oven for 20 minutes, use a spatula to stir them gently and flip them over. Add the sausage, peppers, and onions to the baking sheet. Stir to combine and spread everything across the baking sheet.
- Roast an additional 20 minutes. The potatoes should be slightly crisp, the sausage should be plump and juicy, and the peppers should be slightly shriveled and beginning to brown. Enjoy!
