STIR-FRIED GARLIC GREEN BEANS
The green beans should remain crunchy in this dish, which is adapted from Grace Young's recipe in "Stir-Fry to the Sky's Edge."

- Bring a pot of water to a boil, season with salt and add the green beans. Boil 1 minute, drain and rinse with cold water, then place on a kitchen towel to dry thoroughly. (If vegetables aren't dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) Place within reach of your wok or pan.
- Combine the soy sauce and wine or sherry in a small bowl or measuring cup and place within reach of your wok or pan. Place the garlic, ginger and red pepper flakes in another small container near the burner.
- Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan. Add the garlic and ginger, stir-frying for no more than 10 seconds, and then add the green beans. Toss together, then add the soy sauce and sherry and stir-fry for one to two minutes, until the beans are crisp-tender. Remove from the heat and serve.

- 1. Add sauce ingredients to a small sauce pan and stir. Bring to a boil and reduce heat. Reduce sauce to a 1/3.
- 2. Meanwhile, blanch greens beans in boiling water for 3-5 minutes than place in a water bath. Drain green beans
- 3. Add oil to a high-heat wok. Saute onions, garlic, red pepper flakes, ginger and lemon grass for 1 minute.
- 4. Add red peppers and green beans to wok. Stir-fry for 2-3 minutes
- 5. Toss in lobster and stir fry for 1 minute. Add warm sauce and cook until veggies and lobster are well coated and heated through. Serve warm.

GREEN BEANS ASIAN STYLE STIR FRY
This is a great recipe for the green bean lover or hater. This is a simple recipe. I did some experimenting in my kitchen. I came up with this recipe. They have a touch of sweetness with some garlic. We love this as a side dish. They are gobbled up in no time. My family no longer hates green beans. They actually love these!

- 1. Trim ends and rinse green beans.
- 2. Place 2 TB oil in a nonstick pan or Wok. Let oil heat on high temp. before adding green beans. Add in the green beans. Sir fry for a few minutes. Add in a 1/4 cup of water. Reduce heat to medium. Cover the beans. Check every minute. uncover the green beans and toss with spatula. The beans should about halfway cooked through. If not add a little bit more water.
- 3. Uncover and let water cook off. When water cooks off. Add in some more oil. Toss beans. Add in the garlic and quickly stirfry until garlic is golden brown. About 2-3 minutes. Not burnt! The beans will take on a little bit of brownness as well. Add in the quarter cup of water, and sauce. Cook tossing the green beans. Cook until liquid reduces to half.
- 4. Add in some more oil. Toss beans. Add in the garlic Add the hoison sauce. Mix to distribute well. stir fry for A few minutes . All liquid should have cooked off by now. Remove from heat and serve.

- Stir-Fry Sauce: Combine the stir-fry sauce ingredients in a small bowl.
- Set aside.
- Stir- Fry: In a large skillet or wok.
- Heat the oil and stir-fry the green beans,until they are barely crisp-tender, about 2 minutes.
- Add water and continue stir-frying for another 2 minutes, until the beans are crisp-tender and the water has evaporated.

- Twist and pull off the round tail fins from each lobster tail to release the flesh at the base. With the shell's curved side down, use kitchen shears to cut through the stiff white shell pieces and opaque white membrane. Flip the tail on its side and apply pressure to crack the shell. Pull out the lobster meat and set aside in the refrigerator. Reserve the lobster shells.
- Cook ginger slices and onion in a large pot over medium heat, stirring, until fragrant, 1 to 2 minutes. Add the lobster shells and cook, stirring, until bright orange, 2 to 3 minutes. Add water, apple (or sugar) and 1/2 teaspoon salt. Bring to a simmer. Cook, uncovered, for 45 minutes. Strain the stock through a fine-mesh sieve. Discard the solids. Measure out 1/2 cup for the stir-fry (reserve the remainder for another use).
- Combine 1/3 cup cornstarch, white pepper and the remaining 1/2 teaspoon salt in a shallow dish. Cut each lobster tail crosswise into 5 pieces. Add to the cornstarch mixture and toss to coat.
- Pour 1 1/2 cups oil into a large flat-bottom wok. Heat over medium-high heat to 375°F. In 2 or 3 batches, fry the lobster pieces, using a slotted spoon to agitate them and coat with hot oil. Fry until delicately crisp but not brown, 1 to 3 minutes. Transfer to a paper-towel-lined plate to drain. (Return the oil to 375° between batches.) Let the oil cool for 5 minutes then carefully pour it into a pot (discard the oil after cooling). Wash and dry the wok.
