STOVE-TOP CAPPUCCINO

Use whole-fat milk to add a luscious flavor to your morning coffee.

Stove-Top Cappuccino image

Steps:

  • Fill bottom part of a stovetop espresso pot with water to the pressure-gauge line. Drop in filter basket. Add a heaping tablespoon of espresso for every 3 ounces of water. Screw shut. Cook over medium heat until intense boiling stops and top compartment is full, 3 to 5 minutes.
  • Pour milk into a mug, and microwave to heat through (or heat in pan on stove top).
  • Place a small (4-inch) whisk in hot milk. Holding the handle of the whisk between your palms, rapidly twirl back and forth until foam appears, about 20 seconds. Pour coffee into mug; sweeten if desired.

Easy Cappuccino image

Steps:

  • Place milk in a 1-cup microwave-safe measuring cup. Microwave, uncovered, on high for 1 minute or until milk is hot and small bubbles form around edge of cup., Place a metal whisk in cup; whisk vigorously by holding whisk handle loosely between palms and quickly rubbing hands back and forth. Remove foam to a small measuring cup as it forms. Continue whisking until foam measures 1/3 cup; set aside., Pour Easy Espresso into a mug; pour in remaining hot milk. Spoon foam over top and serve immediately.

Since the oven can be full during Thanksgiving or Christmas, I'm showing you how to make stuffing on the stovetop that's not just "as good" as the one you bake, it might even be better. Stuffing can be served immediately, or reheated once the oven is available.

Stovetop Stuffing image

Steps:

  • Add dry bread cubes to a large mixing bowl and set aside.
  • Melt 1 stick of butter in a large skillet set over medium-high heat. Add onions, celery, and salt, and sauté until the onions soften and turn translucent, about 5 minutes. Add sage, thyme, and broth to the pan. Stir together and wait for the mixture to come to a boil.
  • Carefully remove from heat and pour over the bread cubes. Toss with a large spoon until the bread is evenly saturated.
  • Let the mixture sit and cool in the bowl for about 15 minutes, tossing occasionally.
  • Add black pepper, cayenne, parsley, rosemary, and beaten egg to the bowl and mix until evenly combined. Allow mixture to cool completely, tossing occasionally.
  • Melt remaining 1/2 stick of butter in a large, nonstick skillet over medium heat. Add the stuffing mixture, and pat down with a spatula. Cook until a golden brown crust forms, about 5 minutes, before turning the stuffing over, one spatula's worth at a time. Cover and cook about 5 minutes, before uncovering and tossing again. Continue cooking and tossing uncovered, until the desired amount of browning and crusting has occurred.
  • Transfer to a casserole dish or serving plate.

  • Place the milk in a pitcher. Hold the steaming wand just below the surface of the milk until it doubles in size and is very foamy. Lower the steaming wand slightly until the milk reaches 150 degrees Fahrenheit (use a thermometer or judge by when your hand can’t hold the pitcher for more than a few seconds).
  • Heat the milk to 150 degrees Fahrenheit, which is hot to the touch but not simmering. Measure with a food thermometer, or you can approximate by testing with your finger. Use a milk frother, French press or whisk to froth the milk until it’s very foamy. For a cappuccino you’ll want a good amount of froth: you’re going for 1/3 espresso, 1/3 steamed milk and 1/3 foam. We highly recommend reading How to Froth Milk if this is your first time frothing. For the French press method, note that it’s useful to have at least 1 cup to have more milk to work with: this makes enough for 2 drinks.
