STOVE-TOP POTATOES

Use the tiniest whole red potatoes you can find for this potato dish, but if they aren't available, simply quarter the larger ones.

Stove-Top Potatoes image

Steps:

  • Place the potatoes in a skillet filled with water to cover. Add the oil and garlic, bring to a boil, and cook at a rolling boil until the water has evaporated, about 15 to 20 minutes. Cook the potatoes 2 to 3 minutes more, until the skins are seared and golden, stirring the potatoes with a wooden spoon once or twice.
  • Divide among 4 plates and serve, sprinkled with parsley.

8 small red potatoes
1 tablespoon extra-virgin olive oil
3 garlic cloves, thinly sliced
2 tablespoons chopped fresh parsley

Early Morning Oven Roasted New Potatoes image

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • In a hot skillet, melt the butter. Stir in rosemary, salt and pepper. Coat potatoes evenly with the melted butter. Arrange the potatoes in a single layer on a baking pan.
  • Bake in a preheated oven until potatoes are golden brown, approximately 20 to 25 minutes. Toss them occasionally to ensure that they brown on all sides.

Steps:

  • Heat the oil in a skillet over medium heat, and saute the garlic and onion until tender. Stir in the tomato, and cook until heated through. Mix in potatoes and rutabaga. Season with oregano, salt, and pepper. Pour in the broth, and bring to a boil. Reduce heat to low, and continue cooking 15 minutes, or until potatoes and rutabaga are tender.

Steps:

  • Melt bacon or meat drippings in a saucepan.
  • Sauté onions until golden but not brown.
  • Add potato slices, diced swede, water, and salt.
  • Cover tightly, and then simmer very gently until cooked.
  • Shake occasionally (try not to stir) to avoid sticking.
  • Check for readiness after ½ hour (may require up to 1 hour).
  • If potatoes are new, add oatmeal when done.
  • Cover, shake well, and leave 10 minutes off heat.

  • Melt butter in a large frying pan with a lid. When it is foaming, add potatoes. Shake well so they are covered in butter and in a single layer. Sprinkle over a little salt.
  • Cover and cook gently for about 30 mins, tossing the pan frequently, until the potatoes are tender. Leave them in the hot butter until ready to serve and sprinkle with salt and pepper.

  • In a greased 13x9-in. baking dish, layer the potatoes and onion. In a small bowl, combine the butter, salt, pepper and garlic powder; drizzle over potatoes and onion. Sprinkle with Parmesan cheese; stir gently to combine., Cover and bake at 400° for 45 minutes or until potatoes are tender. Uncover; sprinkle with the cheddar cheese. Bake 5-10 minutes longer or until the cheese is melted.

A recipe I found for Scotland at All British Foods.com., posting for ZWT6. Sometimes also called 'stovies' this Scottish recipe derives from the French etouffer, to cook in a closed pot, and dates from the strong Scottish/French links of the seventeenth century. It makes a filling family dish which can safely be left to its own devices; a little extra cooking time will not spoil the flavour.

Stoved Chicken (Chicken Casserole With Potatoes, Bacon and Onion image

Steps:

  • Heat half of the butter and the oil in a large frying pan and fry the chicken and bacon for 5 minutes, until lightly browned.
  • Place a thick layer of potato slices, then onion slices, in the base of a large ovenproof casserole. Season well, add the thyme and dot with half the remaining butter.
  • Add the chicken and bacon, season to taste and dot with the remaining butter. Cover with the remaining onions and finally a layer of potatoes. Season and dot with butter. Pour over the stock.
  • Cover and bake at 150°C (300°F) mark 2 for about 2 hours, until the chicken is tender and the potatoes are cooked, adding a little more hot stock if necessary.
  • Just before serving sprinkle with snipped chives.

2 tablespoons butter (divided)
1 tablespoon vegetable oil
4 chicken quarters, halved
4 ounces bacon, chopped
2 1/2 lbs potatoes, peeled and cut into 1/4 inch slices (starchy kind)
2 large onions, sliced
