  • While they bake, finely chop five to seven strawberries until they are almost a pulp.
  • In a bowl, beat the whipping cream, chopped strawberries, and powdered sugar until the mixture forms stiff peaks when the beaters are lifted up. Set aside.
  • Let the cupcakes cool completely, then cut a hole in each one about the width of a quarter (leave room at the bottom of the cupcake). Press a strawberry, pointed side down into each cupcake, then top with whipped cream.

  • Heat oven to 350°F (325°F for dark or nonstick pans).
  • Place paper baking cup in each of 24 regular-size muffin cups.
  • Make and bake cake mix as directed on box for 24 cupcakes, substituting soda for the water and using oil and egg whites.
  • Cool in pan 10 minutes; remove from pan to cooling rack.
  • Cool completely, about 30 minutes.
  • Stir 1 or 2 drops food color into frosting.
  • Frost cupcakes.
  • In small resealable food-storage plastic bag, place sprinkles and 1 drop food color; seal bag.
  • Gently shake and massage sprinkles until mixture is various shades of pink; sprinkle around edges of frosted cupcakes.

  • For the cupcakes: Preheat the oven to 325 degrees F. Line muffin pans with paper liners.
  • In a medium bowl, cream together the granulated sugar, gelatin, butter and cream cheese. Beat in the eggs, one at a time, then stir in the vanilla and rum. Combine the flour and baking powder, add to the creamed mixture and mix well. Stir in the milk and strawberries until the batter is smooth. Bake for 20 to 25 minutes. The cupcakes are done when they spring back to the touch. Let cool.
  • For the strawberry frosting: In a medium bowl, cream together butter and cream cheese. Add the confectioners' sugar, rum and strawberry extract.
  • For the strawberry filling: Cut the strawberries into small pieces and place into a medium saucepan. Add the sugar and bring to a light boil. Once the filling begins to boil, turn off the heat, add the rum and let sit for 10 minutes to cool.

  • Line two 12-cup muffin tins with paper liners. Preheat the oven to 350 degrees F (175 degrees C), or to 325 degrees F (165 degrees C) if using dark or nonstick pans.
