Steps:
- In a small bowl, whisk the vinegar with the garlic and basil.
- Add the oil gradually and whisk to combine with the other ingredients.

DIRTY MARTINI

- Fill a shaker with ice. Add 1 ounce olive juice and 2 ounces each gin and dry vermouth. Shake well, then strain into a martini glass. Add a dash of bitters and garnish with an olive.
BIG CITY SALMON WITH MARTINI SAUCE
Steps:
- Season each piece of salmon with salt and pepper and sprinkle with a little chopped parsley. If sautéing, heat the olive oil in a wide skillet and cook the fish, about 3 minutes on the first side, then about 2 minutes on the second side to achieve a medium-rare temperature. (Increase the cooking time by about 90 seconds on each side if you want the salmon to be cooked through.) You may also grill or broil the salmon, as desired.
- Spoon the Martini Sauce over (or alongside) the cooked salmon and serve immediately. This salmon is delicious with boiled new potatoes or rice.

- Place the shallots, gin, vermouth, juniper berries, and green peppercorns in a small saucepan and bring to a boil. Lower the heat and simmer until reduced to about 3 tablespoons liquid. Add the cream and reduce to 1/4 cup.
- Strain and return the liquid to the saucepan (discard the solids). Whisk in the butter. Add the olives and season to taste with lemon juice, salt, and a little pepper. Cover and keep warm while you prepare the salmon.

MARTINI
The martini is the undisputed king of cocktails, nearly a category unto itself. The frosty, austere, all-alcohol icon has bewitched palates and imaginations for more than a century, to a measure no other drink can even approach. The trend toward drier martinis, with only trace amounts of vermouth, began after World War II. (In martini vernacular, "dry" means less vermouth, "wet" means more.) That style remains popular. But, thank goodness, in recent years crusading bartenders have brought proportions back close to historical, wetter dimensions. A martini isn't a martini without the herbal tang of vermouth; a 3 to 1 ratio of gin to vermouth should satisfy both tastes, given that the vermouth is of good quality and fresh.

- Cut lemon in half lengthwise; cut one half into eight thin wedges. Thread olives and lemon wedges onto toothpicks for garnishes; set aside., Using the lemon half, moisten the rims of eight large cocktail glasses. Sprinkle salt on a plate; hold glasses upside down and dip rims into salt. Divide the salad greens, tomatoes, onion and sliced olives among prepared glasses.
