HOLIDAY CAKE BON BONS
Bite-sized bliss! Cake ball bon bons are a snap to make using cake mix and frosting and are an instant hit on any dessert tray.

- Heat oven to 350°F (325°F for dark or nonstick pan). Make and bake cake as directed on box for 13x9-inch pan. Cool 15 minutes.
- In large bowl, crumble warm cake; stir in frosting until well blended. Refrigerate 1 to 2 hours or until firm enough to shape.
- Drop mixture by teaspoonfuls onto cookie sheet. Shape into balls. (If mixture is too sticky, refrigerate until firm enough to shape.) Freeze 30 minutes.
- Line another cookie sheet with foil. In 1-quart microwavable bowl, microwave 12 oz candy coating uncovered on High 1 minute 30 seconds; stir. Continue microwaving and stirring in 15-second intervals until melted and smooth. Remove one-third of the balls from the freezer. Using 2 forks, dip and roll each ball in coating. Place on foil-covered cookie sheet. Decorate as desired. Refrigerate cake balls about 10 minutes or until coating is set. Melt remaining candy coating in 12-oz batches; dip remaining balls. Serve at room temperature. Store in airtight container.

Steps:
- 1. Make the strawberry cake according to the directions on the box.
- 2. Allow the cake to cool completely.
- 3. Crumble the cake into a large bowl, not too tiny but no large pieces.
- 4. Combine in a small bowl, 1/2 a jar of strawberry frosting and softened cream cheese, blend well.
- 5. Blend into the cake mixture and mix well. Chill until firm. I chilled it overnight.
- 6. I used a cookie scoop for more uniformed sized balls and place them on a cookie sheet lined with waxed paper. Refrigerate.
- 7. Melt the white chocolate chips in a large microwave-safe mug, stirring after each 30 second interval and adding a few drops of red food coloring to get the shade of pink that you like.
- 8. Be sure that the consistency of the melted chocolate is not too thick and is smooth with no lumps remaining.
- 9. Using a fork with thin tines and an ice tea spoon, dunk the balls into the chocolate and completely cover the balls then gently scooping them out with the fork and lightly shaking the excess off and placing them into the candy liners.
- 10. If some of the cake is showing, use a toothpick covered with the coating and touch-up to close the holes and sprinkle right away with candy sprinkles.
- 11. Do not refrigerate, but let it set in a cool area.

- Grease an 8 x 8 inch square pan.
- In a medium saucepan combine sugar, water and cream of tartar; bring to a boil. Heat to 242 to 248 degrees F (116 to 120 degrees C), or until a small amount of syrup dropped into cold water forms a firm but pliable ball. Stir in the strawberry preserves; return to a boil. Remove from heat.
- Slowly pour the strawberry mixture over the beaten egg whites, stirring constantly. Beat until thick and fluffy. Pour into prepared pan. Cool for 2 hours, or until firm, and cut into squares.

STRAWBERRY CHEESECAKE BON BONS
These are dainty little dessert treats that can be whipped up in a jiffy. Make for two for a romantic dessert, or spend the day making a batch for a dinner party. :) We created these treats from Recipe #244193. If you use a cheesecake that has a graham cracker crust, you can use that for the graham cracker crumbs and just add the sweet biscuits to that. For more chocolate flavor, after you put the crumb mixture on the strawberries, dip the bottoms in chocolate coating and allow to firm up. Enjoy!

- Mix graham cracker crumbs, biscuit crumbs, and 3 Tbsp of the cheesecake and set aside. Hull the strawberries from the bottom (opposite the leaves) and set aside. NOTE: A potato peeler works great!
- Place remaining cheesecake (without crumbs) into a pastry bag. Fill strawberries with cheese filling, then smear the bottoms of strawberries with the crumb mixture.
- Drizzle hot fudge syrup over strawberries. Serve immediately or cover tray with plastic wrap and refrigerate till needed later that day.

- Line a 8" square tin with greaseproof paper. I grease the tin first with a little butter to help the paper stick to it
- Put the condensed milk and white chocolate in a pan and melt together on a low heat, stirring together as it melts

- In 4-quart heavy nonstick saucepan, heat sweetened condensed milk, 1 tablespoon unsalted butter and coconut to boiling, stirring constantly with wooden spoon. Reduce heat to medium-low and continue to cook, stirring constantly, 10 to 15 minutes or until thick and shiny and starts to pull away from bottom and sides of pan. - Meanwhile, rinse strawberries and remove stems. Use cloth or paper towels to dry strawberries very well. They must be completely dry before you start making bonbons.
- Grease hands with unsalted butter. Scoop up generous tablespoonful of cold coconut mixture; flatten in the palm of your hand. Place a strawberry over it and wrap coconut mixture around to conform to shape of strawberry. Repeat to use up coconut mixture. Place covered strawberries in freezer 15 minutes.
