STRAWBERRY-MINT SODA
While making a pitcher of my Strawberry Mojitos, I had a request for one without any alcohol. It seemed to be a hit! You can adjust the taste by adding less or more of any ingredient. Refreshing and light, it's perfect on a hot summer day!

Steps:
- Squeeze the lime quarters into a sturdy glass pitcher. Toss the juiced limes into the pitcher along with the mint, strawberries, and sugar. Crush the fruits together with a muddler to release the juices from the strawberries and the oil from the mint leaves. Stir in the club soda until the sugar has dissolved. Pour into the sugared glasses over ice cubes to serve.

STRAWBERRY LEMONADE

Steps:
- In a medium saucepan, bring the water and sugar to a boil. Reduce the heat and simmer, stirring occasionally, until the sugar dissolves. Add the lemon peel and lemon juice, stir, and remove from the heat. Let cool completely, then strain into a clean pitcher.
- In a blender, puree the pint of strawberries and add to the pitcher with the lemon juice. Stir well to combine and refrigerate until well chilled.
- Add the sparkling water and stir well. Pour over glasses filled with ice and serve, garnished with mint and strawberries.
STRAWBERRY SODA
Steps:
- Bring sugar and water to a boil. Add strawberries and remove from heat. Steep strawberries until syrup is cool. Puree in a blender and pass through a sieve. Fill half of glass with strawberry puree, then add ice and club soda, seltzer or gingerl ale; garnish glass with mint.
STRAWBERRY MOJITO
This recipe comes from the Seattle P-I. I'm posting it here so I don't lose it! With strawberry season approaching, I can't wait to try this one!

- In a tall glass, add the sugar, 3 strawberries, 5 mint leaves and a splash of soda water.
- Lightly muddle. Squeeze juice from the lime into the glass; add rum.
- Stir and fill glass with ice. Top off drink with soda water.
- Garnish with remaining strawberry and sprig of mint.

- combine sugar and water in a saucepan. Place over medium heat until the sugar is completely dissolved, mixing occasionally. Set aside to cool.
- Place lemon juice, club soda and cooled syrup in a large pitcher and stir. (Here you can adjust sweet/tart balance to your liking) Add strawberries, cucumbers and mint. Top with ice cubes. Serve over additional ice if desired and garnish glasses with cucumber slices and or strawberries.
