STRAWBERRY BREAD

This is wonderful hot or cold, for breakfast or as a dessert. A definite family favorite!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter and flour two 9 x 5-inch loaf pans.
  • Slice strawberries and place in medium-sized bowl. Sprinkle lightly with sugar, and set aside while preparing batter.
  • Combine flour, sugar, cinnamon, salt and baking soda in large bowl; mix well. Blend oil and eggs into strawberries. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. Stir in pecans. Divide batter into pans.
  • Bake in preheated oven until a tester inserted in the center comes out clean, 45 to 50 minutes (test each loaf separately). Let cool in pans on wire rack for 10 minutes. Turn loaves out of pans, and allow to cool before slicing.

This is a delicious sweet bread recipe that I received from a friend years ago. It's a wonderful breakfast option or you can make little loaves to give as gifts. This bread can also be frozen easily and saved for a later date.

Strawberry Jam Bread image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans.
  • Combine flour, salt, cream of tartar, and baking soda in a bowl; set aside.
  • Stir strawberry jam and buttermilk together; set aside.
  • Combine sugar, butter, vanilla extract, and lemon juice in a large mixing bowl. Beat with an electric mixer until light and fluffy. Add eggs one at a time, beating well after each addition. Add dry ingredients alternately with strawberry jam mixture, mixing just until blended. Fold in walnuts.
  • Divide batter evenly between the prepared pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 55 minutes. Cool for 15 minutes. Remove from pans onto cooling racks.

Steps:

  • Put sliced strawberries in a bowl, and pour sugar over them. Leave to sit about 10 minutes.
  • Dissolve the yeast in the warm water.
  • In a bowl, combine 3 cups of the flour, salt, baking soda, vanilla, cream, and strawberries, and yeast mixture. Knead to make a soft dough, adding more flour if needed.
  • Place in a greased bowl, and let rise until doubled, about 1 1/2 hours.
  • Punch down and put in a greased loaf pan, and allow to rise again for 1 hour.
  • bake at 350F for about 45 minutes, or until the top is browned.
  • Cooking time includes rising.

  • Preheat the oven to 350 degrees. Lightly grease a 8x4-inch loaf pan with cooking spray. Line with parchment paper so that you have some overhanging the sides like "handles" then lightly grease again. Set aside.
  • In a medium bowl, combine the white whole wheat flour, cinnamon, salt, and baking soda. In a separate bowl or large measuring cup, stir together the sugar and melted coconut oil (this will help keep the oil from resolidifying). Stir in the Greek yogurt, eggs, and vanilla extract.
  • Add the wet ingredients to the dry ingredients, then stir together by hand with a rubber spatula, just until evenly combined—do not over mix. The batter will be very thick. Fold in the diced strawberries.
  • Scrape the mixture into the prepared baking pan and smooth the top. Bake for 45 to 55 minutes, until a toothpick inserted in the center comes out clean. At the 30 minute mark, lightly tent the bread with foil to prevent it from browning too quickly, then continue baking as directed.
