- Heat the oven to 425 degrees F.
- Halve 4 of the small zucchini lengthwise and scoop out the seeds and soft center flesh with a spoon to produce a set of shallow shells to hold the stuffing. Reserve the center flesh. Arrange the small hulls in a baking dish. Drizzle with a little extra-virgin olive oil and season with salt and pepper, to taste. Chop the reserved zucchini flesh and set aside.
- Heat the remaining extra-virgin olive oil in a skillet over medium-high heat and saute the mushrooms, onions and garlic for 5 minutes. Add in the reserved zucchini and tomatoes, season with salt and pepper, to taste and heat through for 1 minute, then remove from the heat.
- While the veggies cook, toast the bread in a toaster, then spread liberally with butter and tear into pieces. Add the bread to a food processor along with the parsley and tarragon or basil, and pulse into herb crumbs.
- Fold the herb crumbs into the veggies along with 1/2 cup Parmesan and the egg. Mound the zucchini stuffing in to the shells and roast for 15 minutes. Remove from the oven, sprinkle the tops with remaining cheese and broil for 2 to 3 minutes to brown.

- Preheat the oven to 450 degrees F and line a baking sheet with foil. Halve 2 zucchini lengthwise; scoop out the seeds, leaving a 1/4-inch-thick shell. Chop the scooped-out zucchini flesh and transfer to a bowl. Grate the remaining whole zucchini on the large holes of a box grater; add to the bowl along with 1 teaspoon salt. Set aside 10 minutes, then squeeze out the liquid.
- Heat the olive oil in a skillet over medium-high heat. Add the garlic, minced jalapeno, chile powder and grated zucchini mixture; cook until tender, 4 minutes. Let cool, then stir in the cheese. Spoon into the zucchini halves. Transfer to the baking sheet and bake until bubbling, 20 minutes.
- Combine the tomato, scallions and cilantro in a small bowl. Spoon over the zucchini, then top with pickled jalapenos.

- Preheat the oven to 400 degrees F.
- With a teaspoon, scoop out the flesh from the interior of the zucchini, so they resemble boats. Place the zucchini boats in a 9-by-13-inch casserole dish. Chop the zucchini flesh and set aside.
- In a medium saute pan over medium-high heat, add the olive oil and let heat through. Add the sweet and the hot Italian sausage, and cook for 4 minutes. Add the garlic, onion, chopped zucchini flesh, tomatoes and some salt and pepper. Cook until softened, about 4 minutes.
- In a medium bowl, add the Parmesan, mozzarella, breadcrumbs and parsley; mix to combine.
- Spoon in and mound the sausage mixture into the zucchini boats. Sprinkle the breadcrumb mixture over top. Place in oven and bake until golden on top, 20 minutes.
HERB-STUFFED ZUCCHINI
Steps:
- Split 2 medium zucchini and scoop out the seeds; season with salt. Combine 1/3 cup panko breadcrumbs, 1 chopped tomato, 1/4 cup mixed chopped parsley and dill, 2 tablespoons chopped walnuts, 1 minced garlic clove, 2 tablespoons olive oil, and salt and pepper to taste. Spoon into the zucchini; drizzle with olive oil. Bake at 425 degrees F, 25 to 30 minutes.

- Slice zucchini in half lengthwise. Scoop out insides leaving about 1/4-in shell.
- Finely chop zucchini pulp; set aside. Saute onion in oil in large heavy skillet. Add mushrooms, garlic and reserved chopped zucchini; cook over medium heat until most of moisture evaporates.
- Add cream cheese, egg, Parmesan, parsley, and pepper.
- Mix well; cook for about 10 minutes.

STUFFED ZUCCHINI WITH PARMESAN

- 1. Preheat the oven to 400 degrees F. Cut the zucchini in half lengthwise and use a small spoon to scoop out the seeds, forming a shallow cavity. Finely grated one of the seeded zucchini into a bowl, salt and set aside. Liberally sprinkle the other zucchini shells with salt and place cut-side down on paper towels while preparing the filling.
- 2. Melt 3 tablespoons butter in small skillet over medium-high heat. Add the onion and pepper and cook, stirring often, until softened, about 5 minutes. Add the garlic and cook 1 minute longer. Lightly squeeze the grated zucchini to remove the excess moisture and add to the onions and peppers. Cook until the mixture dries slightly. Remove from the heat, stir in the panko, cheese, and thyme. Season with salt and pepper. Cool slightly.
- 3. Wipe the salt from the zucchini and dry as thoroughly as possible with paper towels. Divide the filling among the zucchini halves, mounding them slightly down the center. - Preheat the oven to 400˚ F. Drizzle a rimmed baking sheet with 2 tablespoons olive oil. Season the zucchini halves with salt and pepper. Add to the baking sheet and turn to coat with the oil. Arrange the zucchini cut-side down in a single layer. Roast until crisp-tender, about 15 minutes.
- Meanwhile, heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the onion and cook until translucent, about 4 minutes. - Cook whole zucchini in boiling water about 10 minutes, or until tender.
- Cut in half lengthwise.
- Scoop out centers, leaving a 1/4-inch shell; chop center portion and set aside.

- Preheat the oven to 475 degrees F.
- Combine the rice with the beef, lemon zest and juice, 1/2 cup tomato sauce, 1/4 cup parsley, the basil, pine nuts and garlic in a medium bowl. Season with a 4-finger pinch of salt and a generous amount of pepper. Mix with a fork until well combined; set aside.
- Scoop out the flesh from the zucchini with a melon baller or teaspoon, leaving a 1/4-inch-thick shell. Reserve the scooped-out flesh. Cut the zucchini boats crosswise into 2-inch pieces.
- Combine the reserved zucchini flesh with the onions and tomatoes in a large cast-iron or heavy ovenproof skillet. Season with salt and pepper, drizzle with oil and toss. Add the remaining 1/2 cup tomato sauce and toss again.
- Using your hands or a small spoon, gently stuff each zucchini shell with about 2 tablespoons of the meat filling, pressing to carefully pack it in. Nestle the stuffed zucchini into the vegetables in the skillet and drizzle with oil.
- Bake until the vegetables are soft and the meat is cooked through, about 25 minutes. Garnish with grated Parmesan and the remaining 1/4 cup parsley. Enjoy!
DROP DEAD DELICIOUS STUFFED ZUCCHINI
My mother-in-law is famous for her stuffed zucchini, and now I have the pleasure to share the recipe with all of you.

Steps:
- Wash zucchini, and put in a pot of cold water (do not remove ends).
- Bring to a boil and cook until tender, about 10-15 minutes, maybe a little longer depending on the size of your zucchini.
- Meanwhile, heat olive oil in a fairly large skillet.
- Saute garlic first, then add onions, green pepper, thyme, and oregano.
- When the veggies begin to soften, add ground meat (or whatever you are using), season with salt and pepper, and brown until cooked through.
- Drain off any excess grease.
- Set aside to cool slightly.
- When the zucchini have cooked through, remove from water, and allow to cool enough to handle.
- Slice cooled zucchini lengthwise, and scoop out center, leaving a little veggie flesh to form a"boat.
- "Mix ground meat mixture with the red peppers, and the scooped out zucchini (chopped), and the egg.
- Fill the zucchini boats with the mixture, and top each with a slice of cheese.
- Bake in a 375ºF oven for 20-30 minutes, until heated through, and cheese begins to bubble and brown.
- Serve hot.
- Note: If making this dish with tuna or fish, I like to add a little mayo or garlic mayo, and substitute the raw egg for a hard boiled and chopped one.
SAUSAGE-STUFFED ZUCCHINI
This comes from a book published by Reader's Digest called "Cook Now, Serve Later". It takes a little time, but it is really good. Would be nice - different - for a dinner party or special occasion. I have made it three or four times, and was pleased each time.

- Preheat oven to 350°F.
- Place zucchini halves in large saucepan, weigh them down with a small plate so they will cook evenly, and cover with boiling water.
- Over moderately low heat, simmer for six to eight minutes or until the zucchini are almost tender. Drain and refresh under cold running water.
- With a spoon, scoop the pulp from the zucchini, leaving 1/4" border all around.
- Chop the pulp coarsely, transfer to a sieve, and press with the back of a spoon to extract any excess liquid; set pulp aside. Invert the zucchini on paper towelling to drain.
- Remove and discard sausage casings, break up the meat and saute in a 10-in. skillet over moderate heat for five minutes. Add the onion, parsley, basil and marjoram; cook five minutes more or until the onion is soft.
- Remove from the heat, add the bread crumbs, two tablespoons of the Parmesan cheese, salt and pepper.
- Add some, or all, of the zucchini pulp to the mixture.
- Mix the egg with the stuffing mixture and fill the zucchini boats with equal amounts of the stuffing.
- Place the zucchini boats in a 9" x 13" x 2" baking dish and sprinkle with the remaining two tablespoons Parmesan cheese.
- Bake, uncovered, for 35 to 45 minutes or until the zucchini are heated through and the filling has a lightly browned crust.

- Stir in tomatoes.

YAYA'S STUFFED ZUCCHINI BAKE
These make a wonderful vegetarian meal. You can even add some crumbled tofu to the filling for protein. - Trim the stems off of the zucchinis, leaving just enough to hold the end together when it has softened from cooking. Boil the zucchinis in a large pot of salted water for approximately 5 minutes or until they are semi-done. Remove from the water and let cool.
- Cut the zucchinis in half, length-wise, and scoop out the insides - DO NOT discard. Leave the insides in a colander for several minutes to allow it strain. Place the hollowed out zucchini in a greased baking dish.
- Fry the onions in the oil until they are a rich caramel colour. Add the salt, pepper and oregano. Remove from heat.
- Add the zucchini insides and 1/2 cup of cheese to the onion mixture. Now add the beaten eggs and mix well.
- Soak the slice of bread in some water or milk. Squeeze out the liquid. Put it through the food processor. Add the processed bread to the onion mixture.
- Spoon the filling into the zucchini "boats", sprinkle with dry bread crumbs and remaining cheese.
- Bake at 350 for 30-35 minutes, or until the filling looks set and the tops are golden.

- Preheat the oven to 400 degrees F.
- Lightly drizzle the olive oil into a 9 by 12 inch baking dish.
- Whisk the onion, parsley, egg, ketchup, garlic, salt and pepper in a large bowl to blend. Stir in the cheese and bread crumbs. Mix in the turkey. Cover and refrigerate the turkey mixture.
- Using a melon baller or spoon, carefully scrape out the seeds and inner flesh from the zucchini, leaving the 1/8 inch thick shells. Be careful not to pierce through the skin.
