SUGAR COOKIE FROSTING
This is the frosting I like to use for my soft sugar cookies, "Recipe#286412". It uses heavy whipping cream and I like to add green or red food coloring to it when I make the cookies for Christmas. It should make enough to frost about 4-5 dozen cookies, depending on how thick of layer you use on each cookie and how big the cookies are. Update: 12/21/2009: I have changed the recipe to increase the amount of whipping cream. I agree with the other reviewer that more is needed but be sure to add the whipping cream gradually and then add the rest if needed.

FROSTING FOR SUGAR COOKIES
Frosting for my Recipe #156102 posted in response to a request. I always seem to stir up more of this than is needed. It then invariably ends up spread between graham crackers as sweet little sandwich treats that kids love!

Steps:
- Beat together butter, vanilla, 1 tablespoon cream, and a half cup powdered sugar; stir in a few drops food coloring - The color should be somewhat darker than desired, because it will lighten up as you add more cream and sugar to the frosting.
- Add alternating portions of 1-2 tablespoons cream then a half cup powdered sugar; beating after each addition until well blended.
- Continue adding and beating in portions of cream then powdered sugar until you have incorporated all the ingredients; stir in additional cream or powdered sugar if necessary.
- You may vary the amounts of cream and/or powdered sugar to achieve desired frosting amount and consistency - Your choice of a nice and thick frosting, a very thin glaze, or anything in between is possible.
- Spread finished frosting onto cooled sugar cookies; candy sprinkles are best added as each cookie is frosted - They seem to adhere better that way.
- NOTE: Regular or evaporated milk, whipping cream, whipped cream, or even sour cream - whatever you've got in the fridge - may be substituted (I've subbed in each of these at times) for the half & half.

COOKIE DECORATING FROSTING
Secret recipe from the bakery! A yummy frosting that sets up into a hardened glaze on top of the cookie, but remains tender to eat. Great for taking cookies 'on the road' because they won't stick together.

Steps:
- Mix together sugar, flavoring, measured water, corn syrup, and food coloring. Slowly add enough water to make frosting a spreadable consistency (should be thicker than Elmer's school glue).
- If a strong color is desired, decrease water so that the food coloring doesn't make frosting too runny. If you get the frosting too runny, add a little powdered sugar.
- Spread on cookies (add sprinkles or other toppings immediately). Allow to dry about 30 min or until no longer sticky. Will set up into a glaze so cookies won't stick together when stacked.
- This recipe makes about 1/2 cup of frosting (about enough for one color).

SUGAR COOKIES WITH ALMOND FROSTING

- Make the cookies: Whisk the flour, baking soda and salt in a medium bowl. Beat the butter and granulated sugar in a stand mixer fitted with the paddle attachment on medium speed until fluffy. Beat in the egg, then beat in the vanilla and almond extracts. Reduce the mixer speed to low; add the flour mixture and beat until combined. Cover and chill 1 hour.
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Scoop 1-inch mounds of dough onto the prepared baking sheets, about 2 1/2 inches apart; flatten the mounds with your fingers. Bake until the cookies are golden around the edges, about 10 minutes. Let the cookies cool 10 minutes on the baking sheets, then transfer to racks to cool completely.
- Make the frosting: Beat the butter, almond and vanilla extracts, and salt in a stand mixer fitted with the paddle attachment on medium speed until light and fluffy. Add the confectioners' sugar and beat until smooth and creamy. Transfer to a piping bag fitted with a small star tip. Pipe the frosting onto the cooled cookies and top with nonpareils or Jordan almonds.

- Make cookie dough: Cream butter, adding sugar gradually. Cream until soft and fluffy. Then add eggs one at a time, beating after each addition. Sift dry ingredients together. Alternately add ingredients and cream to egg sugar mixture. Mix well.
- Chill 3 hours or overnight. Roll out on a well-floured board or countertop to 1/4-1/2 inches thickness. Shape with floured cookie cutters. Bake on a parchment paper lined cookie sheet at 350 for 8-10 minutes. (They won't be brown at all when they are done - if the cookie springs back when pressed down lightly, it is done.).
- Make frosting: Whip softened butter and softened cream cheese until light and fluffy. Add vanilla and powdered sugar mixing until well combined. Add milk to bring frosting to desired consistency. When cookies are completely cool, frost. Add sprinkles if desired.
SUGAR COOKIES WITH BUTTERCREAM FROSTING
These cookies are melt-in-your-mouth delicious. They are simple to make and kids love to lick the frosting off the tops. Butter flavoring is in the buttercream for added flavor. You can find it in most supermarkets, in the baking aisle, where there are other flavorings such as vanilla.

- Beat vegetable shortening, white sugar, 1/4 cup milk, eggs, and 1 teaspoon vanilla extract together in a bowl. Whisk flour, salt, and baking soda in a separate bowl. Slowly beat flour mixture into shortening mixture to make a smooth dough.
