SUGARED CRANBERRY TRAIL MIX

Pretzels, toasted almonds, and dried cranberries are given a sweet, crunchy coating to create this crispy mix.

Sugared Cranberry Trail Mix image

Steps:

  • 1. Preheat oven to 350*. To toast almonds, spread almonds evenly on an ungreased baking sheet. Bake 7 to 8 minutes or until almonds are slightly darker in color. Cool completely on baking sheet.
  • 2. reduce oven temperature to 225*. in a large bowl, combine almonds, pretzels, and cranberries. In a small bowl, beat egg white until foamy. Pour pretzel mixture; toss until well coated. In another small bowl, combine sugar, cinnamon, and salt. Sprinkle over pretzel mixture; toss until well coated. Spread evenly on a greased baking sheet. Bake 1 hour, stirring every 15 minutes. Cool completely on baking sheet. Store in an airtight container.

1 c whole almonds
2 c small pretzels
1 c dried cranberries
1 egg white
1/2 c sugar
1/2 tsp ground cinnamon
1/2 tsp salt

SUGARED CRANBERRIES

Sugared fresh cranberries taste sour on the inside and sweet on the outside. Serve them in a glass bowl as a Christmas snack or stick them on toothpicks and poke them into an apple as a fun Christmas decoration.

Steps:

  • Heat sugar and water in a small saucepan over medium heat; cook and stir until the sugar has dissolved, about 3 minutes. Remove syrup from heat and allow to cool until lukewarm. Add cranberries to syrup and carefully stir to coat. Cover and refrigerate 8 hours to overnight.
  • Sprinkle a baking sheet with sugar and line a second baking sheet with parchment paper.
  • Drain cranberries well and spread out onto the sugar-covered baking sheet. Roll in the sugar and transfer cranberries to the parchment-lined baking sheet in a single layer. Allow to dry for 3 hours.

Steps:

  • Preheat your oven to 350 degrees Farenheit.
  • Spread the almonds out evenly on an ungreased baking sheet and bake 7-10 minutes or until the nuts are slightly darker in color.
  • Cool the almonds completely in the baking pan.
  • Reduce the oven temperature to 225 degrees.
  • In a large bowl, mix together the almonds, pretzels, and cranberries and set aside.
  • In a small bowl, mix together the egg white, sugar, cinnamon and salt.
  • Sprinkle the mixture over the almond combination and toss until well coated.
  • Grease the baking pan and spread the mixture out evenly on it.
  • Bake for 1 hour, stir every 15 minutes.
  • Cool trail mix completely in the pan on a cooling rack.
  • Store trail mix in an airtight container.
