Steps:

  • For the pizza dough: Whisk together the flour, baking powder and salt in a medium bowl.
  • Beat together the sugar and butter on medium-low speed in a stand mixer fitted with a paddle attachment until light and creamy. Beat in the lemon zest, vanilla and egg. Increase the speed to medium and add the flour mixture in 2 batches, scraping down the sides of the bowl as necessary, and beat until just incorporated.
  • Divide the dough in half and pat each piece into a disk. Wrap separately with plastic wrap and freeze for 45 minutes.
  • Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment and dust it with flour. Roll one of the discs into a round that is approximately 1/4 inch thick and 6 1/2 inches across. Put a plate or inverted bowl of a similar size on top of the dough and cut off any excess dough to create a clean edge. Transfer to a lightly-floured work surface.
  • Dust the baking sheet again with flour and repeat with the second disc. Brush off the baking sheet and arrange the 2 dough rounds on it. Bake until lightly browned around the edges, about 15 minutes. Cool completely on the baking sheet.
  • Meanwhile, make the frosting: Beat together the cream cheese, yogurt and honey on medium speed in a stand mixer fitted with a paddle attachment until thick and smooth. Mash the blackberries in a small bowl. Strain through a fine mesh sieve; you should have about 2 tablespoons of juice (see Cook's Note). Add the juice to the cream cheese mixture and beat until the frosting is purple with no white streaks. Frost the 2 cooled "pizza" rounds. Refrigerate until ready to serve.
  • Decorate each pizza with blueberries, raspberries and blackberries. Sprinkle each with coconut. Slice each pizza into 4 pieces.

Perhaps it could be drizzled with honey or warm orange marmalade for an adult dessert. I am eager to read your reviews and variations on this recipe! Cheers!

  • Heat oven to 350°F. Grease either a quarter sheet pan, a 9 x 13-inch baking dish, or a 12-inch round pizza pan with cooking spray.
  • In a large mixing bowl either with a stand mixer (with the blade attachment) or hand mixer, beat the butter and sugar together on medium-speed until light and fluffy, about 2 minutes. Add the egg, vanilla and almond extract. Beat on medium speed until completely combined, scraping down the sides partway through if needed. Add in the dry ingredients, and beat on low speed until just combined. (Avoid over-mixing the dough.)
  • Press the dough evenly into the prepared pan/dish*. Use a fork to poke a few holes in the dough, to prevent it from bubbling up. Bake for 15-18 minutes, or until the dough is lightly golden. Transfer to a wire baking rack to let cool for 20 minutes.

  • Preheat oven to 375 degrees. For crust, cream butter and sugars together. Mix in eggs and vanilla extract and beat well. Add dry ingredients.
  • Mix cream cheese and powdered sugar together until smooth. If you want a sweeter frosting, you can add more powdered sugar.
  • Fresh Fruit Topping (as pictured): Wash and slice fruit and decorate away!Tropical Fruit Pizza: If using canned fruits, drain well and pat dry with a paper towel. Add fruit and sliced banana to prepared and frosted pizza just before serving. I like to start in the center with a layer of fruit and work my way out. Sprinkle with coconut flakes.Caramel Apple Pizza: Slice apples into thin slices, and place them in a bowl. Sprinkle one 2 teaspoons of lemon juice over apples and toss until they are covered. This will prevent browning. Add slices to pizza in a design of your choice. One idea is to start in the middle fanning apple slices out into a circle from the center, with red apple skins all facing the direction. Fan the green apple slices out for the next layer, again with the skins all facing the same direction. Drizzle caramel topping over apples.

  • In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, cream the softened butter for about 1 minute on medium speed. Get it nice and smooth, then add the sugar and beat on medium speed until fluffy and light in color. Beat in egg and vanilla. Scrape down the sides as needed.
  • In a medium bowl, whisk the flour, salt, baking powder, baking soda, and cornstarch together. With the mixer running on low speed, slowly add the dry ingredients to the wet ingredients. Once completely combined, cover the dough tightly and chill in the refrigerator for 30 minutes and up to 1 day. Without chilling, your cookie dough may spread over the sides of the pan.
  • Preheat oven to 350°F (177°C). Grease a 12-inch pizza pan. Remove chilled cookie dough from the refrigerator and press onto the pizza pan in an even flat circle, as pictured above. Bake for 18-20 minutes or until the edges are very lightly browned. Overbaking will lend a hard crust. Allow crust to cool completely before decorating. I put the crust in the refrigerator after 10 minutes of cooling at room temperature – this sped up the process.
