MANDARIN STEAK SALAD

- Prepare the mandarin vinaigrette: In a saucepan, combine all of the ingredients except the olive oil, and reduce over low heat to 1/2 cup. Remove from the heat and let cool. Stir in the olive oil and reserve.
- Prepare the ginger vinaigrette: In a bowl, mix together all of the ingredients and correct the seasonings, as necessary. Reserve
- Preheat a grill. Brush the steaks with some of the mandarin marinade and season them with salt and pepper. Brush the whole shiitake caps with some of the marinade and season with salt and pepper. Grill the steaks to medium-rare and set aside in warm spot. Grill the mushrooms until they are soft and set aside.
- Toss the salad greens with the reserved ginger vinaigrette, adding any collected meat juices to the dressing, and set aside.
- In a large saute pan, heat the butter until it is foamy. Add the shallot and the sliced shiitakes and saute for several minutes, or until the shallot is translucent and the mushrooms have given up most of their liquid. Season with salt and pepper, to taste.
- Mound the salad greens in the center of 4 dinner plates. Slice the steak thinly on the diagonal and fan the slices around 1 side of the greens with the grilled mushroom caps. Arrange the mushrooms decoratively on the opposite side. Serve immediately.
MANDARIN SALAD
Mmmm, try this for your next pot-luck. Easy to make. I especially love the crunchy sugared almonds and toasted ramen noodles. This could easily be made into a main-dish salad by adding grilled chicken breast strips.

- Remove flavor packet from soup mix and set aside.
- Crumble noodles.
- Bake noodles on a cookie sheet for 8-10 minutes at 350°F until toasted, stirring after 5 minutes.
- Cool.
- In small nonstick skillet over medium-low heat, cook sliced almonds and 3 tablespoons sugar for 5-6 minutes, stirring constantly.
- Cook until sugar is dissolved and almonds are evenly coated, and light, golden brown. Be careful not to overcook.
- Remove from heat and set aside.
- Whisk together contents of reserved flavor packet, remaining 2 tablespoons sugar, oil, and next 5 ingredients.
- Toss together lettuces, celery and onions in bowl.
- Drizzle with dressing; toss.
- Add noodles, almond mixture and oranges; toss.
- Serve immediately.
- •Variation: Try this with a handful of chopped fresh cilantro instead of the parsley and a sprinkling of crushed red chili flakes--I love it that way.

- Shake first 6 dressing ingredients in a jar and refrigerate.
- Stir almonds and sugar in a small pan over medium heat until sugar melts and starts to caramelize and almonds are very lightly toasted.
- Scrape into metal bowl and cool to room temperature.
- Break up and store covered at room temperature.
- Just before serving, put chopped lettuces in a large bowl.

- GARNISH:.
- In saucepan, cook almonds and sugar over low heat, stirring constantly, till sugar is melted and almonds are coated.
- Cool. Break apart. Set aside.
- SWEET 'N' SOUR DRESSING:
- Pour all ingredients into jar with cover. Shake well. (May be stored in refrigerator for up to 2 weeks)
- SALAD:.
- Thinly slice celery and green onions, including the tops.
- Chop or tear lettuces into bite-sized pieces.
- Place lettuces in plastic bag. Add celery and onions.

- In a large bowl, combine the romaine lettuce, oranges and green onions.
- Heat 2 tablespoons sugar with the almonds in saucepan over medium heat. Cook and stir while sugar starts to melt and coat almonds. Stir constantly until almonds are light brown. Turn onto a plate, and cool for 10 minutes.
- Combine red wine vinegar, olive oil, one tablespoon sugar, red pepper flakes and black pepper in a jar with a tight fitting lid. Shake vigorously until sugar is dissolved.

I like to make this the day before and refrigerate, individually, in ziploc bags. When we are ready to eat mix together. (Add chow mein noodles last if desired. I don't use them at all)
