Pasta with Sun-Dried Tomatoes image

Steps:

  • Cook the pasta in a large pot of boiling salted water with a splash of oil to keep it from sticking together. Boil for 12 minutes, or according to the directions on the package. Drain well and allow to cool. Place the pasta in a bowl and add the tomatoes, olives, mozzarella, and chopped sun-dried tomatoes.
  • For the dressing, combine the sun-dried tomatoes, vinegar, olive oil, garlic, capers, salt, and pepper in a food processor until almost smooth.
  • Pour the dressing over the pasta, sprinkle with the Parmesan and basil, and toss well.

1/2 pound fusilli (spirals) pasta

1 pound ripe tomatoes, medium-diced
3/4 cup good black olives, such as kalamata, pitted and diced
1 pound fresh mozzarella, medium-diced
6 sun-dried tomatoes in oil, drained and chopped
5 sun-dried tomatoes in oil, drained
2 tablespoons red wine vinegar
6 tablespoons good olive oil
1 garlic clove, diced
1 teaspoon capers, drained
2 teaspoons kosher salt

The original recipe is from Allrecipes.I have made changes to this and this is truly one of my favorite recipes!! With the calories this has, I hate to even say I like the Ronzoni smart taste or Dreamfield pasta !! Once you see the calories it's like " why bother "? But at least in my mind, I think I am doing myself a favor !!Daughter # 2 just called me yesterday for the recipe so she could make it for her sister's who are coming for dinner.

Steps:

  • In large pan- boil chicken in water until cooked set aside to cool.
  • When cool cut in small pieces.
  • I another large pan, cook 3 cups cream just until it boils ( watch so it does not boil over ! ) Add bouillon, asiago cheese and wine.Stir until well blended.
  • Add cornstarch mixture and simmer constantly until thickened.
  • Mix in sun-dried tomatoes.
  • This can be made ahead of time and put in fridge for later use.
  • Cook bacon in large fry pan and cook until crisp.
  • remove and drain on paper towel.
  • in same pan add butter over medium heat, saute red onion and garlic and sliced mushrooms until cooked, add bacon cook for 2-3 minutes.
  • stir in green onions,chicken and remaining 1 cup cream and cook until heated . Add Asiago cream sauce and blend together. Serve over pasta and sprinkle with parsley ! Worth the effort -- Enjoy with remaining white wine !

Sun-dried Tomato and Mozzarella Pasta image

Steps:

  • Boil your pasta with a decent amount of salt- taste it whilst it's almost cooked so you can correct over-salting with more boiling water.
  • When the pasta is almost cooked, get started on the 'sauce'. Fry 1 or 2 cloves of garlic in a pan of oil- you can use the sun-dried tomato oil if you want more flavour, but I wouldn't recommend it.
  • Slice the sun-dried tomatoes into small cubes and fry with the garlic for a minute. When the garlic is brown, shred the mozzarella into smaller pieces and let it melt in the pan, mixing often to stop it from sticking.
  • Drain the pasta and transfer it back into the saucepan. Then, add your 'sauce' and mix until combined.
  • You see how easy that was? How easy? Once you get the hang of this, it'll be a regular recipe. Trust me. It's so good.

Steps:

  • In a large saucepan over medium heat, cook 2 cups cream until just bubbling. Watch carefully, to ensure that it doesn't boil over. Stir in bouillon and Asiago cheese. Stir with a whisk until dissolved. Add cornstarch mixture, and simmer until sauce is thickened, stirring constantly. Mix in the sun-dried tomatoes. Set aside, or cover and refrigerate for later use.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Melt butter in a large saucepan over medium heat. Saute red onion until soft and translucent. Stir in garlic and cooked bacon, and cook for 2 minutes. Stir in green onions, chicken and 1 cup cream. Cook, stirring, until cream is heated through. Add Asiago cream sauce, and heat through.   • Boil pasta in salted water.
  • Drain, reserving the liquid.
  • Set aside.

Pasta Alfredo With Sun-Dried Tomatoes image

Steps:

  • Begin by boiling water to prepare pasta, while sauteing chicken breasts. (two birds with one stone) Cook pasta according to package directions.
  • Wash and pat dry chicken breast, slice into bite sized pieces and in a large pan, saute in olive oil, seasoning with garlic powder, salt and pepper until just starting to brown nicely. Remove from pan and set aside.
  • In same pan melt butter and saute the sun dried tomatoes for about 5 minutes.
  • Return chicken to pan.
  • For the sauce: puree the garlic, salt and pepper, and grated Parmesan in a food processor. In seperate pan, bring the qt of heavy cream with the garlic, salt and pepper and Parmesan to a low boil, stirring constantly, then turn down heat and let simmer for approx 5 minutes.
  • Once pasta is cooked, drain and rinse and add to chicken mixture.
  • Pour the cream mixture over the chicken, tomatoes and pasta and mix well.
