BAKED ZITI WITH ITALIAN SAUSAGE

Steps:
- Cook sausage links according to package directions; drain, cut into ¼-inch slices.
- In a large bowl, combine sausage slices, pasta, pasta sauce, water, basil, garlic, Parmesan cheese, pepper and mix well.
- Spoon mixture into a greased 9-in. x 13-in. x 2-in. baking dish.
- Arrange garlic bread slices on top of meat mixture.
- Sprinkle evenly with mozzarella cheese.
- In a small bowl, dip tomato slices into olive oil.
- Place one slice of tomato on each piece of bread.
- Bake uncovered, at 400°F for 25-30 minutes or until heated through. Remove from oven and let rest for 5 minutes before serving.
- Garnish with basil leaves. Serve.
CHEATER BAKED ZITI
Baked ziti without the ricotta cheese. I made this one night out of what I had available, and the family thought it was fantastic!

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Fill a large pot with lightly salted water and bring to a boil. Stir in the ziti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still slightly firm, about 12 minutes. Drain well.
- While the pasta is cooking, heat a large skillet over medium-high heat and stir in the sausage. Cook and stir until the sausage is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the pasta, spaghetti sauce, and Alfredo sauce. Transfer the mixture into a large baking dish, and top with the Italian cheese blend.
- Bake in the preheated oven until the sauce is bubbly and the cheese is melted, about 15 minutes.

BAKED ZITI WITH SAUSAGE

- Bring a large pot of salted water to a boil. Heat oil in a large skillet over medium heat. Add onion; cook until translucent, about 3 minutes. Stir in garlic. Remove from heat; add vodka, if desired. Return to heat; cook until almost evaporated, 1 minute.
- Stir in tomatoes and oregano; cook until tomatoes are falling apart, 10 to 15 minutes. Add cream; cook until warmed through, about 5 minutes. Season sauce with salt and pepper.
- Meanwhile, preheat oven to 400 degrees. Cook pasta in the boiling water until al dente, according to package instructions. Add spinach, and cook just until wilted. Drain, and return contents to pot.
- Add tomato sauce, sausage, and cubed fontina to pot; toss to coat. Season with salt and pepper. Divide evenly between two shallow 1 1/2-quart baking dishes.
- Top with grated fontina and Parmesan. Bake until browned and edges are crisp, 20 to 30 minutes.

BAKED ZITI I
A lady I worked with brought this in one day, and it was a hit. Now it is the favorite of all my dinner guests. It's great for a covered dish dinner too. I have made this also without the meat, and it is well received.

- Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
- In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.
- Bake for 30 minutes in the preheated oven, or until cheeses are melted.

PERFECT POTLUCK DISH SAUSAGE AND PEPPER BAKED ZITI
Both kids and adults will dive into this new twist on baked ziti. If you like, assemble it up to one day ahead, refrigerate and bake just before serving. If you make it the day before you will have to adjust the baking time. I have taken this to our church potluck dinners. The recipe is always requested. Enjoy!

Steps:
- Prepare sauce. In deep nonstick 12 inch skillet cook sausage over medium heat 5 minutes or until browned on all sides, stirring occasionally.
- Reduce heat to medium.
- Discard all but two tablespoons sausage fat.
- To sausage in skillet add garlic, peppers and onion
- Cook until vegetables are tender, stirring occasionally.
- Stir in whole tomatoes,tomato sauce, salt,oregano and basil.
- Heat to boiling over medium heat breaking up tomatoes with side of spoon.
- Reduce heat to low, cover and simmer 10 minutes.
- Meanwhile preheat oven to 400.
- Heat large covered saucepot of salted water to boiling over high heat.
- Add pasta; cook 2 minutes less than cooking time recommended on label.
- Drain well.
- Combine vegetables with pasta.
- Pour into 9 x 13 greased pan. Spread mozzarellacubes on top.
- Bake 30 minutes.
- Before serving sprinkle romano cheese on top.

ROUND 2 RECIPE - SAUSAGE AND PEPPER BAKED ZITI
Steps:
- Heat the oven to 375 degrees F.
- Coat a 9 by 13-inch baking pan lightly with cooking spray.
- Bring a large pot of water to a boil over medium heat. Add the pasta and cook for about 6 minutes. It should be a little less than al dente; it will finish cooking in the oven.
- While the pasta is cooking, heat the canola oil in a large skillet over medium-high heat, add the onion and garlic and saute until slightly tender, about 3 minutes. Add the tomatoes and Italian seasoning and cook for another 5 minutes. Chop the reserved sausage and peppers and add them to the skillet to heat through. Taste and adjust the seasoning with salt and pepper, to taste.
- Drain the pasta and add it to the prepared baking pan. Pour the tomato sauce over the pasta and sprinkle with the cheese. Bake until the cheese is melted and lightly browned, about 30 minutes. Remove from the oven and serve.
THE BEST BAKED ZITI
I am half Italian, was raised eating the finest Italian-American cuisine, and have filmed almost 2000 recipe videos, so when you consider all of those facts, it seems incredible that I have never posted a video for baked ziti. Hopefully I make up for that long wait by posting what I think is the best version of it.

- Cut down the length of each sausage with a sharp knife. Remove and discard casings.
- Heat olive oil in a large saucepan set over high heat. Add sausages and onion. Cook, stirring occasionally and breaking up with a spatula, until the sausage begins to brown, and the onion turns translucent, 5 to 7 minutes. Add oregano, thyme, and rosemary and cook for 1 minute more. Pour in marinara sauce. Pour 1 cup water into each jar to rinse out remaining sauce; add to the saucepan. Stir together and bring sauce to a simmer.
- Reduce the heat to medium-low, and let simmer, stirring occasionally, for 1 hour. Taste for seasoning and adjust if needed. Turn off heat and reserve until needed. Before using, skim any excess fat that rises to the surface.
- While sauce simmers, bring a large pot of generously salted water to a boil. Add ziti and cook, stirring occasionally, for 1 or 2 minutes less than the directions on the package call for, about 8 minutes. Drain well and transfer into a large mixing bowl.
- Carefully add the meat sauce and stir until thoroughly combined. Let rest for 5 minutes.
- Meanwhile, preheat the oven to 375 degrees F (190 degrees C). Grease a large 9x15-inch or 9x13-inch casserole dish with a drizzle of olive oil.
- Use a slotted spoon to transfer half of the pasta and sauce mixture to the prepared dish, then use a spatula to even out into a uniform layer. Top with 1/2 of the ricotta cheese, 1/2 of the mozzarella cheese, and then 1/2 of the grated Pecorino Romano cheese, being sure to distribute evenly. Top with the rest of the pasta and sauce mixture and give the pan a little shake to settle the sauce. Repeat the cheese application.
- Bake in the center of the preheated oven until the cheese is melted and the casserole is piping hot, 30 to 35 minutes. Remove from the oven and let cool 10 to 15 minutes before serving. Top with parsley.

- Preheat oven to 350 degrees.
- Boil water to cook 10 oz. or a little more than half of a large box of ziti and cook til al dente then drain.
- Brown and crumble the sausage and then add spaghetti sauce to the sausage to warm up.
- In a 4-5 quart casserole dish pour in cooked ziti and top with alfredo sauce stirring to mix well.
- Pour sausage and spaghetti sauce on top of the alfredo, but do not stir it together.
- Cover with shredded mozzarella and bake for 30 minutes.

SAUSAGE AND BELL PEPPER ZITI

- Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain. Return to pot.
- Meanwhile, heat oil in heavy medium skillet over medium-high heat. Add sausage; sauté until brown, breaking up with fork, about 4 minutes. Add onions and peppers; sauté 5 minutes. Stir in wine; boil 2 minutes, scraping up browned bits. Add tomatoes with juices. Reduce heat to medium and cover; simmer until slightly thickened, about 4 minutes.
- Add sauce to pasta. Toss over medium heat until heated through. Season with salt and pepper. Sprinkle with Parmesan cheese and serve.
SUPERB SAUSAGE ZITI
Delicious twist to traditional ziti, it is mild enough that even the kids love it. I am always asked for the recipie when this is served! Excellent served with garlic or fresh italian bread and salad.
