SUPER FLUFFY BREAD STICKS
Just as good if not better than the Olive Garden's®! We absolutely love these! Fun to make and eat!

Steps:
- Dissolve sugar and yeast in 1 cup plus 1 tablespoon warm water in a bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
- Combine flour and salt in the bowl of a stand mixer fitted with the paddle attachment. Mix 2 tablespoons butter into flour mixture until incorporated. Pour yeast mixture into flour mixture and knead dough using the dough hook attachment until smooth and elastic, about 10 minutes.
- Place dough in a container and cover container with a towel or plastic wrap; let stand until doubled in size, 1 to 1 1/2 hours.
- Line a baking sheet with parchment paper.
- Divide dough into 2-ounce portions and roll into 7-inch long sticks. Arrange sticks on the prepared baking sheet; cover with plastic wrap and let stand until dough doubles in size, 1 to 1 1/2 hours.
- Preheat oven to 400 degrees F (200 degrees C). Remove plastic wrap from dough.
- Bake in the preheated oven until breadsticks are golden brown, 10 to 12 minutes. Brush each breadstick using 2 tablespoons melted butter; top with garlic salt.

Steps:
- Combine 1-1/2 cups flour, yeast, sugar and salt. In a small saucepan, heat milk, 1/4 cup water and butter to 120°-130°. Add to dry ingredients; beat on medium speed just until moistened. Stir in enough remaining flour to form a stiff dough., Turn dough onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 30 minutes., Punch down dough. Pinch off golf ball-sized pieces. On a lightly floured surface, shape each into a 6-in. rope. Place on greased baking sheets 1 in. apart. Cover and let rise for 15 minutes., Preheat oven to 400°. Beat egg white and remaining water; brush over breadsticks. Sprinkle with coarse salt. Bake until golden, about 10 minutes. Remove from pans to wire racks to cool.

SUPPER ON A BREADSTICK
This is comfort food that my Gram always made growing up. It's easy and very kid-friendly. I usually cut the recipe in half and use a mini loaf. It's best when the layer of meat is no more than 1/2 inch thick. My Gram used Accent seasoning. I like a dash of garlic powder & italian seasoning. I criss-cross 2 inch sliced strips of American Cheese singels across the top of the meat the last 5 minutes of baking. I serve it with a salad and it's the perfect dinner on a cold night.

Steps:
- Combine ingredients, except cheese.
- Cut bread in half lengthwise.
- Spread mixture on top.
- Wrap in foil, leaving meat uncovered to prevent bread from becoming hard.
- Place on cookie sheet.
- Bake @ 350 for 25 minutes.
- Garnish with crisscrossed 2 inch strips of cheese singles or shredded cheddar cheese and bake 5 minutes longer.
- Cut into 3 inch slices and serve. Eat it with your hands like garlic bread!

ALMOST-FAMOUS BREADSTICKS

- Make the dough: Place 1/4 cup warm water in the bowl of a mixer; sprinkle in the yeast and set aside until foamy, about 5 minutes. Add the flour, butter, sugar, fine salt and 1 1/4 cups plus 2 tablespoons warm water; mix with the paddle attachment until a slightly sticky dough forms, 5 minutes.
- Knead the dough by hand on a floured surface until very smooth and soft, 3 minutes. Roll into a 2-foot-long log; cut into 16 1 1/2-inch-long pieces. Knead each piece slightly and shape into a 7-inch-long breadstick; arrange 2 inches apart on a parchment-lined baking sheet. Cover with a cloth; let rise in a warm spot until almost doubled, about 45 minutes.
- Preheat the oven to 400 degrees. Make the topping: Brush the breadsticks with 1 1/2 tablespoons of the butter and sprinkle with 1/4 teaspoon kosher salt. Bake until lightly golden, about 15 minutes. Meanwhile, combine the remaining 1/4 teaspoon salt with the garlic powder and oregano. Brush the warm breadsticks with the remaining 1 1/2 tablespoons melted butter and sprinkle with the flavored salt.
SUPPER ON A BREAD SLICE
This is tasty, but not exactly diet food and lately I've made it with ground turkey, rather than beef. I like to make this when we're vacationing at our cabin in the woods. I found this years ago in a newspaper, don't remember which one, but it was sent in by a Jane Achterberg from Wisconsin.

- Heat oven to 350°.
- Mix all ingredients, except bread, in a large bowl.
- Cut bread in half lengthwise; spread meat mixture on top of cut sides of bread.
- Wrap aluminum foil around the crusty bottom and sides of each bread half, leaving meat mixture uncovered; put onto baking sheet (s).
- Bake until meat is cooked through and bread is crusty, about 35 minutes.

- In a large bowl or stand mixer combine 1/2 cup of the warm water with the sugar and yeast. Stir to combine and let rest for 5 minutes. Add the remaining 1/4 cup warm water, olive oil, salt and vinegar.

- Combine warm water, yeast and sugar in a mixing bowl and let sit for about 3-4 minutes, until yeast is bubbling up. Add in oil, salt, garlic, onion powder and flour. Start with 2 1/2 cups of flour, then add more until the dough cleans the sides of the mixing bowl. (I use a mixer for this part as it makes it just so much easier!)
- Continue mixing for an additional 3-4 minutes, then cover with plastic wrap and let sit in a warm place for 15 minutes. In cold weather, I like to turn my oven on for about 3 or 4 minutes, then turn it off and let my dough rest in the oven.
- Spray counter top and rolling pin with non-stick cooking spray and roll dough out into a large rectangle about 1/4" thick. Brush with 3 TBSP melted butter and 1 tsp garlic salt, if desired. Sprinkle the top half of your dough rectangle with 2-3 cups shredded cheese. I use 2 cups of cheese, but if you adore those oozing cheese types of recipes, use 3 cups.
