SWEET NOODLE PUDDING/KUGEL (NUT TOPPING)
I like the way this sounds but haven't tried it yet. It's from Marcia Saltzman in Pingry Cooks. It has chopped nuts in the topping which is a bit different from the usual. If making for company, make sure there are no peanut allergies! You need to have this in the refrigerator all day or or night before baking so plan accordingly.

Steps:
- Cook noodles shorter time than stated on the package; drain and stir in next 6 ingredients and mix well.
- Put into a baking dish.
- Mix topping ingredients and spread over noodles.
- Cover and refrigerate all day or all night before baking.
- *You may freeze this when ready to refrigerate and then thaw slightly before cooking and bake longer.
- When ready to bake, place in a preheated 350 degree F. oven for 1 hour.
- Topping should be golden brown.

NOODLE KUGEL
This is my favorite sweet noodle pudding. I usually serve it on Rosh Hashanah. I use the pre-crushed corn flake crumbs you find in a box at the grocery, though of course you could crush your own.

Steps:
- Cook noodles as directed on package. Put 1 to 4 tablespoons of butter through the hot noodles, or to taste. Put noodles in greased 9x13" pan.
- Beat cream cheese, eggs, and 1/2 cup sugar together. Add milk and juice and mix well. Pour over noodles.
- Mix cornflake crumbs, remaining 1/4 cup sugar and cinnamon together in a bowl.
- Melt 2 tablespoons of butter and work through the cornflake mixture.
- Sprinkle cornflake crumb mixture over top of noodles.
- Bake in a preheated 350F oven for 45 minutes.

NOODLE KUGEL

- Preheat the oven to 350 degrees F. Butter a 10 by 13 by 2 1/4-inch baking dish.
- Drizzle some oil into a large pot of boiling salted water. Cook the noodles for 6 to 8 minutes, until tender. Drain.
- In a large bowl, whisk together the eggs, half-and-half, brown sugar, vanilla, cinnamon, salt, and pepper. Stir in the ricotta and raisins. Add the drained noodles.
- Pour the noodle mixture into the baking dish. Place the filled dish in a larger pan and pour in enough hot water to come halfway up the sides. Cover the entire assembly with aluminum foil. Bake for 45 minutes, then remove the foil and bake for another 45 minutes, or until the custard is just set.
NOODLE KUGEL
Steps:
- Preheat oven to 375 degrees F.
- Boil the noodles in salted water for about 4 minutes. Strain noodles from water. In a large mixing bowl, combine noodles with remaining ingredients and pour into a greased, approximately 9-by-13-inch baking dish.
- Bake until custard is set and top is golden brown, about 30 to 45 minutes.
BUTTERSCOTCH CARROT NOODLE PUDDING AKA KUGEL
This is a very sweet noodle pudding. Serve this as a sweet side dish like you would a Thanksgiving sweet potato casserole. You may halve this recipe if you like, in which case use 3 medium eggs. Please use mild curry powder in this.

- Preheat oven to 350F and lightly grease a 9x13" glass casserole dish.
- Prepare noodles according to package directions, drain and return to pot (off of the heat.) Add butter to noodles and stir gently to coat; set aside to cool slightly.
- Meanwhile, place cut carrots and 1/2 tsp granulated sugar into a small saucepan and cover with cold water.
- Bring to a boil, then lower heat to medium-ish heat and cook until fork tender (about 10-15 minutes).
- Drain carrots and return to same pot (but off of the heat).
- To the carrots, the 2 Tbsp brown sugar,the curry powder, the raisins, and a teaspoon of butter and stir until combined and butter has melted; set aside.
- Get a large mixing bowl and using a spoon (not a mixer!), stir together the drained ricotta cheese and the cream cheese until well blended.
- Add the 1/2 cup sugar and the eggs and mix until smooth.
- Slowly add the cooled noodles, stirring to combine the egg mixture with the noodles.
- Spread half of the noodle mixture into the prepared casserole dish.
- Pour the carrot mixture over the noodle layer, evenly distributing the raisins& the carrots.
- Top with remaining noodle mixture, spreading with a rubber spatula.
- Combine topping ingredients and sprinkle over the surface.
- Bake, uncovered, in the center of the preheated oven for 35-40 minutes or until golden and set.
- Remove from oven and let cool 10-15 minutes before cutting into squares and serving.

- Preheat oven to 375 degrees F (190 degrees C).
- Bring a large pot of water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
- Fill a large pot with lightly salted water and bring to a rolling boil. Stir in the egg noodles, and return to a boil. Cook uncovered, stirring occasionally, until the noodles have cooked through, but are still firm to the bite, about 5 minutes. Drain well. Place cooked noodles into a mixing bowl.
- With an electric mixer, beat egg whites in a bowl until they form stiff peaks; set egg whites aside. Whisk the egg yolks together in a bowl until smooth, and mix in the sugar until well combined. Pour egg yolk mixture over the noodles, and mix in the cinnamon, apples, raisins, and almonds. Gently fold in the beaten egg whites, trying to keep as much volume as possible. Pour the kugel into the prepared baking dish.
- Bake in the preheated oven until the kugel is browned and the center is set, about 30 minutes.

Steps:
- Preheat oven to 350F and grease an 8x8" square glass casserole dish.
- Place the drained noodles in the prepared dish and sprinkle pineapple and raisins over the top.
- Combine the 1/4 cup sugar, eggs, evaporated milk, sour cream, and vanilla and pour over the noodles and fruit; use a fork to swirl around the mixture so that it gets into all of the nooks and crannies, but without disturbing the placement of the noodles and fruit too much.
- Combine the cookie crumbs, butter, cinnamon, and some sugar, then sprinkle over the top of the casserole.
- Bake for about 30-40 minutes or until the top has begun to get golden and the pudding seems fairly set (not very jiggly).
- Serve warm or cool.

I try and find any excuse to make this recipe, as it is one of my favorites. With the perfect combination of crunchy and sweet, you will never want to use another kugel recipe again.

- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.
- Beat eggs, cottage cheese, milk, sour cream, 1 cup white sugar, butter, cream cheese, vanilla extract, and salt in a large bowl.
- Stir egg noodles into cottage cheese mixture, then pour into prepared baking dish.
- Combine 1/3 cup white sugar, brown sugar, and cinnamon in a small bowl; sprinkle mixture atop noodle kugel.

SWEET KUGEL
This kugel is a must on our Holiday table. It's my most requested recipe. There are no measurements for the nutmeg and cinnamon...I just sprinkle a light dusting on the top of the noodles prior to mixing it all together. The photos I've posted show the kugel before baking, after baking and sliced and ready for serving.

- Mix drained noodles with eggs, cream cheese (see note), cottage cheese, applesauce, raisins, sugar and spices.
- Melt butter in a 9 x 13" baking dish.
- Add noodle mixture.
- Topping: Mix frosted flakes with enough butter to moisten.
- Sprinkle on top of kugel.
- Cover kugel with foil and bake at 350 degrees for 1 hour.
- Uncover and bake 30 minutes longer checking frequently so top does not burn.
- If it is getting to crisp on top, cover with foil till done.
- NOTE: Please DO NOT omit the cream cheese and nutmeg as mentioned in the review. They are an integral part of the recipe.
NOODLE PUDDING
This noodle pudding is a family favorite. The recipe has been passed to many friends. It can also be frozen and it travels well. Can be baked for 30 minutes, allowed to cool and then be frozen. Cut into serving size pieces before freezing. Defrost after freezing and then bake at 350 degrees for 30 minutes or until hot.
