- Preheat the oven to 200 degrees F (95 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a bowl and set aside. Add oil to the skillet and heat over medium heat. Add bell pepper and onion; season with salt and pepper and cook until softened, 3 to 5 minutes. Transfer to a bowl.
- Add sweet potatoes to the hot skillet. Season with salt and black pepper; cook and stir frequently for 5 minutes. Cover skillet and cook 5 minutes more. Remove lid and cook until potatoes are browned, stirring frequently, 5 to 7 minutes more. Set aside.

- Leave peels on sweet potatoes and chop them and apple, onion and sausage into bite sized chunks.

- Cook the sausages according to the instructions, set aside.
- Fry the onion and garlic in a little oil, or the sausage fat, until soft and fragrant. Add the paprika and ginger and fry for a couple more minutes.
- Add the chopped tomatoes, and sugar, bring to a simmer. Add the sweet potato and lentils and cover for 20 minutes, stirring occasionally to stop it sticking.
- Cut the sausages into slices and add to the pan, cook for another 10 minutes or until the sweet potato is soft and sausages are cooked through. You can add some water during this process if the casserole is too thick for your liking.
- Season with salt and pepper to taste, serve by itself or with crust bread.

- Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9x13-inch baking dish.
- Combine sweet potatoes with 2 tablespoons olive oil, 1 teaspoon kosher salt, garlic powder, and 1/2 teaspoon black pepper on a large baking sheet in a single, even layer; toss to coat well.
- Bake in the preheated oven until slightly browned, about 30 minutes.

- Preheat oven to 375 degrees F (190 degrees C). Using two long sheets of aluminum foil on top of each other, fold one long edge together and open out to make a large sheet of foil. Line a 13x9 pan with the foil, allowing edges to hang outside pan

- Cut the potatoes into large chunks and place them in a 6-quart or larger Instant Pot. Add the water and then lock the lid, making sure the pressure valve is set to seal. Cook on high pressure for 8 minutes. Allow the pressure to release naturally for 10 minutes before manually removing the residual pressure.
- Meanwhile, to make the topping, in a bowl, combine the pecans, marshmallows, sugar, butter, cinnamon and salt; set aside.
- Carefully open the lid and mash with a potato masher until smooth. In a medium bow, whisk together the butter, heavy cream, maple syrup, vanilla, egg and spices. - Drain pineapple, saving juice.
- Add enough water to juice to measure 1 and 1/4 cups. Set aside.
- Place pineapple, sweet potatoes, and sausage in 8x8x2 inch casserole dish.
- Combine sugar, cornstarch, and salt in saucepan. Gradually add pineapple juice/water, and stir until blended.
- Cook, stirring constantly, on med/low heat until it thickens and comes to a boil.
- Boil for 1 minute, stirring constantly.
- Remove from heat and add butter until melted.
- Pour over sausage mixture in casserole dish.
- Cover and bake 35-40 minutes at 350°F.
- Serve over rice.

- Dish can be prepared the night before. Cover tightly and chill if you do prepare the night before and then bake uncovered in preheated oven for up to an hour, if baking straight from the fridge.
