PORK CHOPS WITH APPLES AND SWEET AND SOUR SAUCE

Steps:
- Sprinkle the chops with salt and pepper to taste. Set aside.
- Cut each apple into quarters. Peel the quarters, and discard the core of each.
- Dredge the chops in flour. Heat the oil in a large heavy skillet, and add the chops. Cook until well browned on one side, about 5 minutes. Turn the chops, and continue cooking about 5 minutes.
- Remove the chops, and add the quartered apples. Cook about 2 minutes, turning the apples often. Remove the apples, and pour off the fat from the skillet.
- Add the shallots and vinegar and cook briefly, stirring with a wooden spoon. Add the broth and honey. Cook about 1 minute, and stir in the tomato paste.
- Return the chops and apples to the skillet. Bring the sauce to a boil, spoon the sauce over the chops, and cover closely. Cook 10 minutes. Transfer the chops and apples to a serving dish, and pour the sauce over.

- Spray large nonstick skillet with nonstick spray and heat over medium-high heat. Sprinkle pork chops with salt and pepper. Add pork to skillet; sauté 4 minutes. Sprinkle pork chops with 1/2 teaspoon oregano; turn pork chops and sauté just until cooked through, about 2 minutes. Transfer to plate; cover with foil.
- Heat oil in the same skillet over medium-high heat. Add apple and onion wedges and remaining 1/2 teaspoon oregano. Sauté until apples and onion are tender and golden, about 10 minutes. Return pork and any accumulated juices to skillet. Pour apple juice and vinegar over; cook until pork is heated through and liquid is slightly reduced, about 1 minute. Season to taste with salt and pepper. Transfer pork and apple mixture to plates and serve.
SWEET & SOUR APPLE PORK CHOPS
These pork chops are easy, but delicious. I haven't met a person who can resist them yet. I got the recipe from my mom.

- Pre-heat oven to 375 degrees.
- Peel, core, and quarter the apple. Then slice it very thinly (each quarter = 10-12 thin slices). Set aside for later.
- Lay the pork chops in baking dish with about 1 inch between each one.
- Lightly salt and pepper the chops and then sprinkle 2 Tbs. brown sugar over each pork chop trying to evenly cover them.
- Over the brown sugar put onion slices topped with apple slices. The apple slices should cover the entire pork chop.
- Pour 1.5 cups of applesauce over each pork chop.
- On top of each pork chop now shake soy sauce over each of the pork chops. Next, top with 1 Tbs. of brown sugar on each chop.
- Place in the oven for 35-45 minutes depending on your oven. Cut to check for tenderness and to make sure the chops are cooked.

- In a large resealable plastic bag, combine the flour and salt. Add pork chops, one at a time, and shake to coat. In a large skillet, brown chops in oil on both sides. - Heat a skillet over medium-high heat and coat with cooking spray. Quickly brown the pork chops on each side. Set aside.
- Arrange sweet potato slices in the bottom of a 3 to 4 quart slow cooker. Cover with the onion slices, then the apple slices. Sprinkle brown sugar, nutmeg and salt over the apples, and grind a little pepper. Place the pork chops on top of the pile, and cover with sauerkraut. Cover, and cook on Low for about 5 hours. It can go an extra hour without drying out though.

- Place the onions in the bottom of a 5 quart slow cooker. Layer carrots over the onions, followed by layers of celery, mushrooms, and pineapple. Season pork chops with salt and pepper. Place them on top of the vegetables. If you like, you may brown them in a hot skillet first.
- In a medium bowl, stir together the pineapple juice, sherry, cider vinegar, and soy sauce. Stir in the cornstarch until dissolved. Mix in the brown sugar, white pepper, ginger, mustard powder, garlic, salt, pepper, hot pepper sauce and tomato paste. Pour this over the pork chops and vegetables. - Mix flour, sage, garlic, thyme, salt, allspice, and paprika together in a small bowl. Set aside 2/3 of the spice mixture for later use. Sprinkle remaining spice mixture onto the pork chops, coating all sides.

EASY SWEET AND SOUR PORK CHOPS
Being a busy single mom, I look for recipes that are quick, simple and don't have 100 ingredients. This one fits the bill to a T. I've served it to my picky parents and sisters who loved it and my 6 year old always asks for seconds (and even thirds at times)! Original recpie called for equal parts of wet ingredients, but I found it too salty and reduce the soy sauce slightly.

What can I say...I like things simple. Here is another recipe that is taken from Campbell's Dinner's On in 30 Minutes or Less that is quick and goes great served with rice. It calls for condensed chicken broth with garlic & herbs but I have in the past used plain chicken broth and added a touch of garlic and whatever dried herbs I have on hand.

- Place pork chops in a 13x9-in. baking dish. In a bowl, combine pineapple juice, ketchup, honey, vinegar, mustard and salt. Pour over the chops. Cover and bake at 350° for 30 minutes.
