SWEET AND SOUR PEARL ONIONS

Steps:

  • Working in 2 batches, blanch the onions in a medium pot of boiling water for 3 minutes. Peel.
  • Heat the oil over medium heat in a large skillet. Cook, turning the onions over as they brown, until almost tender, about 15 minutes. Add the broth, vinegar, sugar and raisins and bring to a boil. Reduce to a simmer and cook until the sauce is slightly thickened and the onions are tender, 3 to 5 minutes. Stir in the salt and serve.

Add 1/4 cup ketchup, 1 tablespoon red wine vinegar, 2 teaspoons sugar, 1/2 teaspoon hot sauce, and salt and pepper to taste and heat through, 2 to 3 more minutes. Stir in 3 chopped scallions.

Steps:

  • Cook the unpeeled onions in boiling water to cover for about 10 minutes; drain.
  • Plunge into ice water to stop the cooking process; drain well.
  • Peel the skin off of the onions.
  • Cook the butter with brown sugar in a saucepan or skillet until butter melts, whisking often.
  • Add in balsamic vinegar; mix to combine, then add in peeled onions; season with salt and pepper (if using) simmer for about 15 minutes or until thickened.

Steps:

  • Heat oil in pan.
  • Add onions and bay leaves, cook about 5-6 minutes over medium high heat, until browned.
  • Add the lemon rind, sugar and honey to the pan with the onions and bay leaves.
  • Cook for 2-3 minutes, stirring, until onions are lightly caramelized.
  • Add the red wine vinegar to the pan, cook for about 5 minutes, stirring until the onions are tender.
  • The liquid should almost all be gone.
  • Serve immediately.

Steps:

  • Place a rack in middle of oven; preheat to 425°F. Whisk salt, pepper, baking powder, baking soda, sugar, and 2½ cups flour in a large bowl to combine. Add chilled butter and toss to coat. Using your hands, work butter into dry ingredients until there are lots of flat pieces and pea-size bits. Add scallions and toss to evenly distribute.
  • Create a well in the center of mixture and add 1¼ cups sour cream into the center. Using a fork and working in circles, mix until large shaggy clumps form. Turn dough out onto a lightly floured surface and knead once or twice until it comes together (flour your hands if needed). If there are any loose bits, add them to center of dough and knead once more to incorporate. Pat dough into an 8x4" rectangle about 1" thick.
  • Working from a short side, fold dough in thirds as you would a letter. It doesn't need to overlap perfectly. Pat dough into another 8x4" rectangle, then fold dough in thirds like a letter one more time. Pat dough back into an 8x4" rectangle and cut in half lengthwise. Cut each half crosswise into 4 squares for a total of 8 biscuits.
  • Transfer biscuits to a parchment-lined baking sheet. Brush tops gently with melted butter; sprinkle with sea salt. Bake biscuits until golden brown, 18-22 minutes. Serve warm with sour cream (or more butter!) for slathering.
