STU'S BAKED BBQ RIBS

Stu's Baked BBQ Ribs image

Steps:

  • Preheat the oven to 250 degrees F. Line a sheet pan with foil.
  • In a small bowl, mix together the brown sugar, paprika, black pepper, garlic powder, onion powder and 1 teaspoon salt.
  • Lay the ribs onto the prepared sheet pan and season on both sides with salt. With the meat side of the ribs face down, brush with half of the mustard and sprinkle over half of the seasoning mix. Turn the ribs over, so the meat side now faces up, and use the remaining mustard and seasoning mix on the other side. Bake the ribs meat-side up until they are very tender, 2 to 2 1/2 hours.
  • Remove from the oven and spread the ribs with half of the BBQ sauce. Return the sheet pan to the oven for another 30 minutes, allowing the sauce on top to become sticky and delicious.
  • Transfer the ribs to a cutting board and allow them to rest for a few minutes before slicing into individual ribs. Serve with the remaining BBQ sauce on the side.

1/4 cup packed brown sugar
1/4 cup smoked paprika
1 mounded tablespoon ground black pepper
1 mounded tablespoon garlic powder
1 mounded tablespoon onion powder
Kosher salt
2 racks spareribs
1/3 cup yellow mustard
1 cup BBQ sauce

BARBECUE SAUCE

You can always buy barbecue sauce that's to your taste-there are so many kinds on the market now-but this is the one I've come up with over the years, and it's what we use when we make our barbecued St. Louis spareribs at Sweetie Pie's.

  • In a large bowl, combine all the ingredients and whisk well. Use on Sweetie Pie's Tender Oven-Baked St. Louis-Style BBQ Ribs or on any barbecued meat dish.

2 cups tomato sauce or ketchup
1 cup Italian-style salad dressing
1/2 5-ounce bottle Tabasco sauce
1/2 10-ounce bottle steak sauce
1/2 10-ounce bottle Worcestershire sauce
1/2 cup vegetable oil
1 cup sugar
1/4 cup maple syrup
Salt and pepper

  • For the sauce: Use a store bought bbq sauce (My favorite, hands down, is Sweet Baby Ray's Original) or combine all the BBQ sauce ingredients above in a pot, bring to a boil, reduce heat to simmer, and cook uncovered ~ 30 minutes or until sauce is reduced & thickened (it will continue to thicken as it cools). Stir occasionally so it doesn’t burn.
  • For the ribs: Pull any fat off the ribs that easily comes off with your fingers (if you can’t pull it off then it supposed to be there!). Peel off any tough membrane that is on the bony side of the ribs if it’s not done already. Lightly sprinkle ribs with garlic salt, onion powder, and black pepper.
  • Line a baking sheet with aluminum foil and place ribs (bone side up; meat side down) on a baking rack over the sheet (so the ribs aren't sitting in grease). Cover with aluminum foil and bake ~ 3 1/2 -4 hours or until ribs are very tender.
