This is one of my adopted recipes. Based on the previous reviews, it doesn't seem to need any major changes. I actually like certain foods a little bland; if you like things spicier, spice it up as you please.

Steps:
- Prepare pastry shell.
- Preheat oven to 325 degrees F.
- In a bowl stir together eggs, milk, salt, pepper and nutmeg.
- Add chicken.
- Combine grated cheese and flour; add to egg mixture.
- Mix well.
- Pour egg mixture into hot pastry shell.
- Bake at 325 degrees F for 35 to 40 minutes or until a knife inserted near the centre comes out clean.
- Let stand for 10 minutes.

SWISS CHEESE QUICHE (JULIA CHILD)
Posted here for safekeeping. You can also use all milk instead of cream and omit the butter pieces on top. NOTE: As suggested by one reviewer (Dec. 13, 2010), I am revising the recipe to correct a typo. (Sorry for the inconvenience!)

Steps:
- To partly bake the pastry shell:.
- Bake in middle of oven at 400 degrees F. for 8-9 minutes.
- For filling:.
- Preheat oven to 375 degrees F. Place oven rack in upper third of oven.
- Beat eggs.
- Add enough cream (or milk or cream-milk combination) so that eggs and cream measure 1 1/2 cups total.
- Add salt, nutmeg and pepper; mix through.
- Stir in cheese. Check seasoning.
- Pour into pastry shell and distribute butter pieces on top. Place on baking sheet.
- Bake 25-30 minutes or til puffed and browned.
- Slide quiche onto a hot platter and serve.
SWISS CHICKEN
This is a wonderful recipe. This was given to our family years ago by a good friend through the Boy Scouts. My brother would eat it all if he was allowed to and now my children who are both little love this dish. For people on a low budget this is an easy meal to make and it is easy to reheat. My mother, who does not eat chicken, loves the topping of this dish.

- Preheat oven to 350 degrees F(175 degrees C).
- In a 9x13 inch baking dish, layer the chicken breasts, soup and water. Top each breast with a slice of Swiss cheese, then top it all with the breadcrumbs. Cut the butter or margarine into pads and place them over the top of the casserole.
- Bake in the preheated oven for 45 minutes. Let cool and serve.

- Preheat an oven to 350 degrees F (175 degrees C).
- Place chicken in a large baking dish. Scatter mushrooms around and sprinkle with Swiss cheese. In a small bowl, combine cream of mushroom soup, sour cream, and chicken broth. Pour sauce mixture over chicken.
- Bake the chicken breasts in the preheated oven until no longer pink in the center and the juices run clear, about 50 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the oven and sprinkle with Parmesan cheese and return to oven. Bake for an additional 5 minutes.

- In a bowl, mix the soup and milk. Arrange chicken breast halves in the casserole dish. Top each breast half with a slice of cheese. Pour soup and milk over the chicken. Sprinkle with mushrooms.

SOUR CREAM CHICKEN QUICHE

- Preheat oven to 400 degrees F (200 degrees C). Line a 9 inch pie plate with thawed pie crust. Keep in refrigerator until ready to fill.
- In medium frying pan, heat olive oil on medium-high. Add onion and green pepper. Cook three minutes, stirring frequently. Add flour and cook for two minutes, stirring frequently. Stir in chicken, salt, nutmeg and pepper. Spread this mixture over bottom of unbaked pie shell and top with Cheddar and Swiss cheese.
- Combine eggs, milk and sour cream, mix until smooth. Pour over chicken mixture.

CHICKEN BROCCOLI QUICHE
This recipe was born by surveying the contents of the fridge and trying to turn the contents of several plastic containers into something delicious. This is a great use for leftover rice and can be made with any combination of leftover meats and vegetables you like. We've tried it with ham, bacon and crab meat. We also like adding peppers, black olives and tomatoes.

- To make the Crust: Preheat oven to 350 degrees F.
- Combine the ingredients and press into a buttered 9-inch pie pan. Spread the mixture evenly on bottom and sides of the pan and bake for 5 minutes. Remove the crust from the oven set aside and raise the oven temperature to 400 degrees F.
- To make the Filling: Heat the butter in a large skillet over medium-high heat. Add the onion and mushrooms and cook, stirring, until lightly browned. Add the broccoli, chicken, salt, and pepper and stir to combine. Adjust the seasoning, as desired.
- In a bowl, whisk together the eggs and milk. Add the vegetable mixture and cheese and mix well. Pour the mixture into the crust and bake for 15 minutes.
- Reduce the oven temperature to 325 degrees F and bake until just set around the edges but slightly loose in the center, about 30 to 40 minutes. Let the filling set and cool before serving.
