SMOTHERED ROUND STEAK WITH GRAVY
This is one of the first recipes I learned to cook when I was a teenager. Mom taught me to cook over the phone, after I got home from school every day. She was working and I didn't think about it at the time, but later I realized my calls were reassuring to her, since she knew I was safely home. Even when Mom told me how to do it, I nearly always tweaked it! Most of the time, it turned out okay. Mashed potatoes and biscuits are perfect with this, along with a vegetable.

Steps:
- Sprinkle each side of the round steak pieces with salt and pepper, rubbing seasoning into the meat.
- Combine 1/2 cup flour and garlic powder in a 1-gallon resealable bag. Add steak pieces, seal bag, and shake to evenly coat all the pieces.
- Heat 1/3 cup of oil in a large skillet over medium heat until hot. Add seasoned and floured steak pieces to the skillet in a single layer in batches and cook until browned, 4 to 5 minutes per side. Remove from the skillet and keep warm. Repeat with remaining pieces, adding more oil, if necessary, until all are browned.
- Add onion slices to the same skillet and stir, coating onions with pan drippings, until onion slices have separated and are just beginning to soften, about 2 minutes. Move onions to one side of the skillet and return browned steak pieces to the skillet. Spread steak evenly in the skillet and place onions on top.
- Stir together water, beef base, and Worcestershire sauce in a microwave-safe container. Microwave on high for 1 minute, stir, and pour into the skillet. Cover, reduce heat to a simmer, and cook until the steak is tender, about 45 minutes.
- Remove the steak from the skillet and add reserved 1/2 cup of flour to the pan drippings. Increase heat to medium; stir briskly and cook until bubbly, 2 to 3 minutes.
- Stir in milk and keep stirring until gravy bubbles again. Return steak, onions, and any accumulated juices to the skillet, cover, and reduce heat to a simmer. Simmer, stirring occasionally, until flavors are well combined, about 10 minutes.

SWISS STEAK
An old family favorite salvaged from our 30-plus-year-old cookbook. We like this served over egg noodles. I like to increase the tomatoes to a 15 ½-ounce can, and I use a full green pepper and add a teaspoon of paprika.

Steps:
- Mix flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle half the flour mixture on one side of round steak pieces; pound steak until coating is absorbed. Flip steak and coat with remaining flour mixture; pound steak until coating is absorbed. Cut steak into 6 pieces.
- Melt shortening in a large skillet over medium heat; place steak pieces in the hot shortening. Cook until browned, 7 to 10 minutes per side. Cover and simmer until tender, about 1 hour, adding water as needed.
- Turn steak pieces over and add tomatoes, onion, and green bell pepper to the skillet. Season with salt and black pepper. Simmer until vegetables are tender, about 30 more minutes.

SWISS STEAK WITH BROWN GRAVY
I found this recipe online years ago and it was an instant hit with my family. It is especially comforting on a cold winter day.

- Cut each steak into the desired serving size, if necessary. Salt and pepper each steak lightly and dredge in flour. Shake off excess. Set aside.
- If you don't have a skillet with ovenproof handles, you can use a Pyrex dish or an earthenware pan with a cover for the oven. Heat a heavy 12-inch skillet (cast iron, if you have one) with a tight-fitting lid over medium heat. Add the vegetable oil. Brown the cube steaks on both sides and set aside.
- Pour off all of the oil except 1/3 cup. Add 1/3 cup of flour to the oil and stir. Allow the mixture ot brown over medium-low heat and stir frequently to prevent it from burning. When the mixture is about the color of peanut butter, add the onion. Stir and allow the onion to cook for about 1 minute.
- Slowly add the beef stock, stirring constantly. Add the Wercestershire sauce and simmer for 5-10 minutes.
- Return the cube steaks to the pan, cover, and bake in a 275 degree oven for one hour.
- Serve with mashed potatoes and your favorite vegetable.
GRANNY'S STEAK AND GRAVY

- Sprinkle both sides of the steak with the salt, cayenne, and black pepper. Rub seasoning into meat. In a large skillet, heat oil over high heat until hot. Add steak and cook on high until browned, turning steak every 3 to 4 minutes. (Lower heat if necessary.) The steak should be well browned on both sides. Remove steak and add onions and bell peppers to pan. Cook until wilted. Place steak on top of onions and bell peppers and add 1/4 cup of water. Lower heat to medium, cover and simmer for 1 1/2 hours, turning steak every 20 minutes. (Note: when lifting lid of pot, let the water from the lid drain into the pot.) When steak is tender, remove steak and place on a platter. Mix cornstarch with 1/4 cup of water and add to the pot. Stir to make a gravy. Serve gravy over hot rice with steak.

- Trim the fat from the steak, and cut into desired number of servings.

SLOW COOKER SWISS STEAK AND ONION
Delicious and easy Swiss steak recipe that will have you out of the kitchen in under 20 minutes. - Mix flour, salt, mustard, and pepper together in a wide, shallow bowl.
- Dredge cube steaks in the flour mixture to coat completely.
- Heat oil in a skillet over medium-high heat. Fry steaks until golden brown, 2 to 3 minutes per side; transfer to a slow cooker, reserving drippings in the skillet.
- Saute onion and garlic in the reserved drippings in the skillet until softened, 2 to 3 minutes more; add to the slow cooker. Discard the oil.

SWISS STEAK WITH MUSHROOMS, ONIONS, & GRAVY
It is a variation of the dish which my mother made all my life and which I have continued to make my entire marriage. Since there are so few Swiss Steak recipes here with gravy I decided to share this one.

Steps:
- Cut meat into 6-8 large sized pieces (meat will shrink).
- Mix the flour, salt, and pepper in a medium sized dish.
- In a 12 inch skillet heat the vegetable oil until medium hot over medium high heat.
- Dredge meat in the flour mixture well on both sides.
- Brown the meat in the oil well on both sides.
- There should be enough room in the skillet to brown all the meat at once.
- Turn the heat down to medium low.
- Pour the mushrooms and liquid over the meat.
- Top the mushrooms with the sliced onions.
- Cover and simmer 1 to 1 1/2 hours until the meat is tender.
- NOTE**** add water 1/2 cup at a time about every 15 minutes to keep the meat cooking with moist heat.
- When meat is tender turn off heat and remove meat from pan.
- Add 3-3 1/2 cups of cold water to the remaining flour which wasn't using with dredging.
- Stir well to remove lumps.
- Slowly add to the drippings in the pan.
- Stir constantly over medium heat until thickened.
- If gravy is too thick add more water-- if too thin add more flour mixed with cold water.
- Taste and add more salt, pepper/and or beef flavoring as desired.
- Turn heat down to low and gently slide the meat back into the gravy.
- Heat until the meat is hot again and serve.
- Great with mashed potatoes or steamed rice.
- OPTIONAL Hint: I often add a couple teaspoons of Kitchen Bouquet to the finished gravy to give it more color. I decided I should add a note about this in case others would like this helpful hint.

- Preheat oven to 325°. In a large shallow dish, combine flour, salt and pepper. Pound steak with a mallet to tenderize. Add meat, a few pieces at a time, and toss to coat., In an ovenproof Dutch oven, brown steak in oil on both sides. Arrange onion slices between layers of meat. Add water and Worcestershire sauce. , Cover and bake 2 to 2-1/2 hours or until meat is very tender.
