This sounds wonderful! I love swordfish and this is certainly a recipe that celebrates the senses. Give it a try, you'll like it! I hope so, anyway. Note: Can be used with any firm fleshed fish like halibut, salmon, etc.

Swordfish With Almond Crust image

Steps:

  • Pre-heat oven to 400°F Set aside fish and lemon slices. In bowl of food processor, fitted with steel blade, pulse on and off remaining ingredients until mixture forms a rough paste.
  • Line a shallow baking pan with foil. Spray with non-stick spray. Place swordfish steaks in pan. Spread tops evenly with almond mixture.
  • Bake in center of oven 12-15 minutes, until fish is opaque throughout. Remove from oven, plate and garnish with lemon slices.

1 cup fresh parsley
1/2 cup toasted almond
1/4 cup lemon juice
2 tablespoons water
3 teaspoons orange zest
2 teaspoons garlic, coarsely chopped
1/2 teaspoon ground cumin
1/4 teaspoon salt
4 (6 ounce) swordfish steaks, 3/4-inch thick
1 lemon, thinly sliced

Swordfish Baked in Foil with Mediterranean Flavors image

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl combine the artichokes, tomatoes, lemon, olives, and herbs. Drizzle with olive oil, season with salt and pepper, and toss together. Take an 18-inch piece of aluminum foil and fold it in half crosswise. Fold a 1-inch strip on each side over twice, once to close and once to seal; you should now have a pouch. Repeat for 3 more pouches. Season the fillets with salt and pepper and place 1 into each pouch. Add 1/4 of the artichoke mixture to each pouch. Fold over a 1-inch strip of the top twice to seal. Place the packets onto a sheet pan and bake for 20 to 25 minutes, depending on the thickness of your fish. Carefully open the pouches and place the fish and vegetables onto warm plates. Spoon any juices that have accumulated over the fish. Serve immediately.

4 fresh baby artichokes, trimmed and quartered
2 tomatoes, coarsely chopped
1 lemon, sliced thin
1/2 cup black olives
1/2 bunch fresh basil
8 sprigs fresh thyme
4 teaspoons extra-virgin olive oil
4 fish fillets, about 6 ounces each
Kosher salt and freshly ground black pepper

SWORDFISH (OR HALIBUT) WITH A CUMIN CRUST

This aromatic spice rub cooks to a crust, sealing in the moisture of the succulent swordfish steaks. Other firm white fish steaks, such as halibut, also work well in this recipe. Make a large batch of the spice rub and keep in an airtight container for up to 1 month. Use as a rub for chicken breasts or lamb chops.

Swordfish (Or Halibut) With a Cumin Crust image

Steps:

  • Preheat the broiler to medium or prepare the barbecue. To make the spice rub, roughly crush all the spices together in a pestle and mortar or in a bowl using the end of a rolling pin. Add a little salt if desired. Tip the spice mixture onto a flat plate and turn the swordfish steaks in it to coat each side thoroughly.
  • Cook under the broiler or on the barbecue for 8-10 minutes on each side, or until the fish flakes and is just cooked and the outside is golden and crisp.
  • Combine all the salsa ingredients in a bowl, cover and chill until needed. Serve the fish with a spoonful of salsa, a green salad, and lime wedges for squeezing over.

Steps:

  • Place fish in a greased 1-qt. baking dish. Drizzle with butter. Combine mayonnaise and Parmesan cheese; spread over fish. , Bake, uncovered, at 425° for 16-20 minutes or until fish flakes easily with a fork.

Mediterranean Stuffed Swordfish image

Steps:

  • Preheat an outdoor grill for high heat, and lightly oil grate.
  • Cut a slit in steak to create a pocket that is open on one side only. In a cup, mix together 1 tablespoon olive oil and lemon juice; brush over both sides of fish. Set aside.
  • In a small skillet, heat 1 teaspoon olive oil and garlic over medium heat. Cook spinach in oil until wilted. Remove from heat, and stuff into pocket. Place feta in pocket over spinach.
  • Arrange fish on grill, and cook for 8 minutes. Turn over, and continue cooking until cooked through.
