Steps:

  • Bring the broth and water to a boil in saucepan over medium heat. Reduce the heat to low and keep hot.
  • In another saucepan, heat oil over medium heat. Add the scallions and cook for about 3 minutes. Stir in the rice, season with salt and pepper, to taste, and cook for another 2 minutes. Pour in the hot broth mixture and bring to a boil. Reduce the heat to a simmer and cover the saucepan. Cook until the liquid is absorbed and the rice is tender, about 20 minutes. Stir in walnuts and taste for seasoning, adjusting as necessary. Transfer the pilaf to a serving bowl and serve.

1 to 2 tablespoons olive oil
1/2 cup chopped scallions, white and green parts
1 cup long-grain white rice
Salt and freshly ground black pepper
1/2 cup toasted chopped walnuts

Cheesy Rice Pilaf image

Steps:

  • Melt 1 tablespoon butter in a medium saucepan over medium-high heat. Add the onion and garlic and cook, stirring occasionally, until softened, about 5 minutes. Add the rice and stir until lightly toasted, about 1 minute. Add the chicken broth and bring to a full boil. Cover, reduce the heat to low, and cook for 18 minutes.
  • Meanwhile, melt the remaining tablespoon butter in a small saucepan over medium heat. Add the flour and stir until incorporated. Gradually whisk in the milk and bring to a simmer. Simmer until slightly thickened, about 2 minutes. Remove from the heat and whisk in the Gruyere; keep warm, covered.
  • When the rice is cooked, stir in the cheese sauce, parsley, chives and tarragon. Season with salt and pepper.

Quinoa and Rice Pilaf image

Steps:

  • Place the quinoa and rice in a fine-mesh strainer and rinse until the water runs clear. Melt the butter in a medium saucepan over medium-high heat until foamy. Add the quinoa and rice and cook, stirring to coat with the butter, then add the broth or water. Increase the heat to high and bring to a boil, then immediately reduce the heat to low and cover with a tight-fitting lid. Cook for 18 minutes, then remove from the heat and let sit, covered, for 5 minutes. Fluff with a fork and season to taste.

Steps:

  • Saute 1 chopped onion, 2 smashed garlic cloves, 1 cinnamon stick, a strip of lemon zest, 1/2 teaspoon curry powder and a pinch of turmeric in a saucepan with butter and olive oil until lightly browned. Add 1 cup basmati rice and stir until toasted. Add 1 1/3 cups water, season with salt and bring to a boil, then cover and simmer 15 minutes. Let sit 5 minutes, then fluff with a fork and add a splash of lemon juice and some cilantro and cashews.

Steps:

  • Thinly slice 2 scallions. Cook the scallion whites in butter in a saucepan with 6 cardamom pods, 2 fresh bay leaves, 2 star anise pods and 1 cinnamon stick until soft, 2 minutes. Stir in 1 cup basmati rice, then add 1 1/2 cups water and 3/4 teaspoon kosher salt. Bring to a boil, then reduce the heat to low, cover and cook until tender, about 17 minutes. Set aside, covered, 10 minutes. Top with the scallion greens and some chopped dill.
