Steps:

  • Whisk together the first 13 ingredients until blended. Pour 1 cup marinade into a shallow dish. Add chicken; turn to coat. Refrigerate, covered, at least 3 hours or overnight. Cover and refrigerate remaining marinade., Preheat oven to 375°. Drain chicken, discarding marinade. Bake chicken in a greased 15x10x1-in. baking pan until a thermometer reads 170°, 20-25 minutes., Meanwhile, to make sauce, simmer reserved marinade, water and honey in a small saucepan over medium-low heat. Remove from heat; stir in lime juice and cilantro. Serve chicken topped with sauce.,

3 chipotle peppers in adobo sauce, minced
1 tablespoon minced fresh gingerroot

HONEY-LIME SAUCE:
2 tablespoons water
2 teaspoons honey
3 tablespoons lime juice
1 tablespoon chopped fresh cilantro

Tandoori-ish chicken with lime-pickled cucumber image

Steps:

  • Slash the chicken with a sharp knife. Mix the yogurt, garlic, ginger, tomato purée, spices, lemon juice and 1½ tsp salt in a large bowl. Add the chicken, turn to coat, then cover and chill in the fridge overnight.
  • For the pickle, mix together the lime juice, sugar, chilli and 1 tsp salt, then toss with the cucumber and red onion. Chill until ready to use or up to 1 hr.
  • Blitz the yogurt, cumin and herbs with a pinch of salt until smooth. Chill until needed.
  • Shake off the excess marinade and put the chicken on a baking tray, reserving the marinade. Heat the oven to 180C/160C fan/gas 4, then once at temperature, change the setting and heat the grill to high. Grill the chicken, skin-side-up, for 10-15 mins or until beginning to blacken a little. Change the setting back to an oven heat of 180C/160C fan/gas 4. Transfer the chicken to a roasting tin, then brush with the reserved marinade and cook for 20 mins. Serve with the cucumber, yogurt, cucumber pickle and pilau rice.

  • In a small bowl, whisk yogurt, 1 tablespoon lemon juice, garam masala, salt and pepper flakes until blended. Pour 1 cup marinade into a large bowl. Add chicken; turn to coat. Cover; refrigerate up to 6 hours. Tandoori Chicken (Marinade) image

Steps:

  • Place chicken in a shallow baking dish and pierce with a knife in 2-3 places on both sides of chicken.
  • In a bowl, place garlic, ginger, cumin, coriander, red pepper, and salt, and blend with a spoon.
  • Add yogurt, vinegar and lemon juice (optional) and blend well.
  • Rub marinade into gashes in the chicken pieces.
  • Cover and refrigerate and let stand at room temperature until dish can safely be placed in the oven,.
  • Baste the chicken pieces with half of the melted butter, 2 oz., and bake at 350 degrees for 40 minutes.
  • Remove chicken from the oven and baste with the remaining 2 oz. of butter, sprinkle with paprika.

FAST TANDOORI CHICKEN

Here's a dead-simple weeknight meal that Mark Bittman came up with at the dawn of the century for fast tandoori chicken - chicken quickly marinated in yogurt and spices, then run under the broiler for less than 10 minutes. The whole process takes about an hour, but the active cooking time is around 20 minutes in total, and it makes for a delicious family meal when served with Basmati rice and some sautéed spinach.

Fast Tandoori Chicken image

Steps:

  • Heat broiler or grill. Combine yogurt, ginger, garlic, paprika, coriander, half the lime juice and salt and pepper to taste in a large bowl. Dredge chicken in yogurt mixture and marinate 5 to 60 minutes, as time allows.
  • If you're broiling, line a baking sheet with aluminum foil for easier cleanup. Put chicken breasts on pan, underside facing up; reserve marinade that does not cling to breasts. Broil 3 to 4 minutes, or until lightly browned. Turn chicken, and spoon remaining marinade over. Broil on smooth side another 3 to 4 minutes, or until lightly browned. Garnish, add remaining lime juice over chicken and serve, spooning the cooked marinade over the meat and, if you're serving it, over rice.
  • If grilling, cut marinade by half. Cook 3 to 4 minutes a side, until chicken browns and is cooked through, at times brushing with marinade. Garnish, add lime, serve.
