Steps:

  • Preheat the oven to 400 degrees F. Spray a rimmed baking sheet with nonstick cooking spray.
  • Use paper towels to pat the whole fish dry. Score the skin of each branzino by making two shallow cuts on a slight diagonal on each side of the fish. Season each branzino inside and out with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Slice 1 tangerine crosswise into 8 rounds (discard any seeds). Halve and squeeze the other tangerine to get 1/4 cup juice.
  • Stuff the cavity of each branzino with the sliced tangerine, oregano sprigs and rosemary sprigs. Close the belly slightly around the filling and tie loosely with a piece of butcher's string to help hold the filling inside.
  • Heat a large, oven-safe skillet over medium-high heat. Add 2 tablespoons olive oil and swirl to coat the pan. Working one at a time, place the fish in the pan and allow it to sear for 3 minutes, pressing down gently to ensure even browning and crispness. Reduce the heat to medium and cook until the first side is golden-brown and crisp, 1 to 2 minutes longer, then flip the fish and repeat on the other side until the fish is golden-brown and crisp, about 4 minutes.
  • Transfer the fish to the prepared baking sheet. Add 1 tablespoon olive oil to the pan and repeat with the other fish. Place the baking sheet in the oven and cook until the fish are cooked through and the flesh is flaky, about 8 minutes. Remove the fish from the oven and untie and discard the string. Let the fish to rest for 4 minutes.
  • While the fish rests, in a small bowl whisk together the Dijon mustard, chopped oregano, tangerine juice, 1/4 teaspoon salt and 4 teaspoons olive oil. While the fish is still warm, drizzle the vinaigrette over the fish and serve.

2 tangerines or 2 small oranges
4 sprigs fresh oregano, plus 1/2 teaspoon chopped
4 sprigs fresh rosemary
1/4 cup plus 1 teaspoon extra-virgin olive oil

FAST AND EASY TANGERINE SAUCE

Easy sauce for vegetables, chicken, or fish. I originally developed this recipe as a topping for fresh steamed broccoli but found it works well with a variety of foods. I get the tangerine juice from Walmart but other large grocery stores and natural food markets should carry it. For a slightly different flavor try mandarin orange juice.

TANGERINE TOSSED SALAD

My mother taught me how to cook when I was a young girl. The sweet tangerines and crunchy caramelized almonds make this one of my favorite recipes. -Helen Musenbrock, O'Fallon, Missouri

Category Recipe Roundup
  • Tangerine Sauce. This flavorful sauce is the perfect accompaniment to any fish, but I particularly love it on baked salmon. The sweetness of the tangerines pairs perfectly with the depth of the fish and creates such a nice contrast.
  • Tangerine Garlic Chicken. In this dish, chicken gets coated in a honey, garlic, and tangerine glaze, which is such a treat for your tastebuds! This recipe calls for chicken thighs, which I generally prefer as opposed to breasts.
  • Tangerine Strawberry Creamsicle Smoothie. This smoothie has a similar taste to a traditional creamsicle, but the strawberries give it a little extra sweetness, which is so refreshing.
  • Avocado and Tangerine Salad with Jalapeño Vinaigrette. Between the tangerines, avocado, jalapeno, and arugula, this salad has a myriad of flavors and textures, and it also packs a punch!
  • Mediterranean Beet Salad with Tangerines, Greens, and Feta. I absolutely love beet salads, but I had never thought of adding tangerines into the mix until I came across this recipe.
  • Tangerine Salsa. I know what you’re thinking. “Isn’t tangerine salsa too sweet?” While it is sweeter than a traditional tomato salsa, it’s balanced out with lime juice, onion, and tomatoes.
  • Tangerine Caprese Kebabs. These appetizers couldn’t possibly be any prettier! The contrast of the white mozzarella, green mint, and orange tangerines make these look even more appetizing.
  • Tangerine Vanilla Sugar Cookies. If you’re a fan of traditional sugar cookies, just wait until you try this upgraded version. They’re crispy on the outside, chewy on the inside, and bursting with the sugar flavor you know and love coupled with the tanginess of tangerine.
  • Tangerine and Gin. Of course, I had to include a cocktail on this list to go along with the sugar cookies. Made with gin, strawberries, mint, and tangerines, this is one drink that you’ll be hooked on after the first sip.
  • Tangerine Cake. This cake is absolutely bursting with citrus flavor! It’s light, delicious, and the best part is, it couldn’t be easier to make. Your tangerines go straight into the blender — skin and all — and then the mixture gets added into your cake mix.
