- Preheat oven to 350 degrees, and lightly grease an 8-inch cake tin.
- In a deep saucepan over medium heat, combine the apples, 4 tablespoons water, 1/2 cup sugar, 1/4 teaspoon cinnamon, chopped lemon peel and lemon juice. Barely cover with water, bring to a boil, reduce heat to a simmer and cook, stirring, until the mixture reduces and thickens -- about 20 minutes. Mash the mixture to a smooth consistency.

- Preheat oven to 325 degrees F (160 degrees C). Grease a 10 inch tube pan. Line bottom with parchment paper and grease again.
- In large bowl, cream sugar and shortening until light and fluffy. Add eggs and blend well.

- 1. Preheat the oven to 350°. with a rack in the center of the oven. Coat the sides and center tube of the pan with the butter. Toss in the flour and shake the pan to coat the tube surface and sides. Knock out the excess flour. Set aside.
- 2. Place a mesh sieve over a medium mixing bowl and add the cake flour, baking powder, baking soda, cinnamon, allspice, nutmeg, ginger, and salt. Shake the contents into the bowl and set aside.
- 3. Break the eggs into a large mixing bowl. Stir them briefly with a fork to break them up slightly, then add the dark brown sugar. With the mixer on high speed, beat the eggs with the sugar until the mixture is very thick, about 6 minutes. SPICY GINGER APPLESAUCE CAKE WITH CREAM CHEESE FROSTING
This simple sheet cake is packed with three kinds of spicy ginger: fresh, ground and crystallized. - Heat oven to 350 degrees. Butter and flour a 9-by-13-inch glass or light-colored metal baking pan.

I tried to lighten up an excellent white Texas sheet cake recipe I found on this site by using applesauce in place of some (but not all!) of the butter. - Preheat the oven to 375 degrees F (190 degrees C). Spray a 10x15-inch cake pan thoroughly with nonstick cooking spray.
