TANTALIZING CHICKEN KABOBS

I found this recipe in the Sunday Chicago Tribune and made it for dinner last night. I've been using my grill since the weather turned too warm to cook inside. They turned out wonderful, very simple to make. I Hope you enjoy this recipe.

Tantalizing Chicken Kabobs image

Steps:

  • Whisk together olive oil, Realemon lemon juice, garlic, worcestershire sauce, thyme, brown sugar, salt & pepper.
  • Reserve 1/4 cup and set aside.
  • Onto each of the six skewers, alternately thread 3 chicken pieces, with 3 pepper pieces.
  • Finish with one piece of green onion.
  • Arrange in shallow glass bowl.
  • Pour all but 1/4 cup marinade over kabobs.
  • Cover and let stand 30-60 minutes.
  • Place kabobs on greased grill over medium-high heat.
  • Cook, turning occasionally for 8-10 minutes or until desired doneness.
  • Serve drizzled with reserved marinade.

2/3 cup olive oil
1/4 cup lemon juice
3 garlic cloves, finely chopped
2 -3 tablespoons Worcestershire sauce
1 tablespoon fresh thyme, chopped
1 tablespoon brown sugar
1 teaspoon salt
1 teaspoon pepper
1 1/4 lbs boneless skinless chicken breasts, cut into 18 even pieces
1 green pepper, cut into pieces
2 green onions, cut into pieces

Honey-Mustard Chicken Kabobs image

Steps:

  • Cut the chicken, squash and peppers into 1-in. pieces. On four metal or soaked wooden skewers, alternately thread chicken and vegetables. , In a small saucepan, combine glaze ingredients; bring to a boil. Boil for 1 minute or until thickened. , Grill kabobs over hot heat for 10 minutes, turning often. Brush with glaze; grill 5 minutes more or until the chicken is no longer pink and vegetables are tender. Serve over rice if desired.

  • In a separate bowl or liquid measuring cup, whisk together the olive oil, vinegar, honey, garlic, oregano, thyme, salt, and pepper.
  • Pour over the chicken and stir to coat (or seal the bag, removing as much air as possible, and “squish” to coat). Place in the refrigerator to marinate for 30 minutes or up to 3 hours (do not let the chicken sit for longer or the vinegar will cause it to break down). If using wooden skewers, place the skewers in water to soak for at least 20 minutes.
  • When ready to grill, preheat the grill to medium-high heat (about 375 degrees F). Brush the grill grates with canola oil or coat with nonstick grill spray.
