TARRAGON CHICKEN AND RICE SOUP
When I make this soup, I always get rave reviews. The tarragon gives it a special taste. Tastes great the next day for leftovers! To be honest I don't measure the ingredients when I make this recipe, so this is my best guess at how much of each I use. This makes a very thick soup, with a bite of something in every spoonful. If too thick, add more water or chicken broth.

- Fill a Dutch oven or stockpot about 3/4 full with water; mix chicken base, tarragon, basil, and black pepper into water and bring to a boil. Cook chicken in the boiling broth mixture until no longer pink in the center, 15 to 20 minutes. Remove chicken from broth, leaving broth in Dutch oven to simmer. Dice chicken and add it back to the simmering broth.
- Mix rice, onion, carrot, celery, and garlic into simmering broth; cook until rice is tender and soup is thickened, 25 to 30 minutes. Add more water if needed.

Steps:
- Preheat the oven to 300 degrees.
- Remove skin and bones from chicken breasts and cut into 1/2- to 1-inch pieces.
- Combine the chicken, celery, pearl onions and tarragon plus 1 cup of the unsalted chicken broth in a nonstick frying pan.
- Cook on medium heat until the chicken and vegetables are tender, about 10 minutes.
- Set aside to cool.
- In a bowl, combine the wine, remaining 2 cups chicken broth, rice and seasoning packet.
- Let soak for 30 minutes.
- In a baking dish, add the cooked chicken and the wine mixture.
- Cover and bake for 60 minutes.
- Serve immediately.

- Sprinkle chicken with paprika. In a Dutch oven, heat oil over medium heat. This is a very easy and quick recipe to make. I like to serve it with French-cut green beans, seasoned with a little garlic. It is also good served over rice.

- Peel and chop the shallots.
- Cut the chicken into bite-size pieces.
- Season with salt and pepper.
- Heat the butter and oil together in a frying pan.
- Add the chicken pieces and stir so that they brown on all sides.
- Next add the shallots and let simmer 5 minutes over low heat.
- Pour the sour cream into the pan with the chicken and shallots, and let it cook down 1 to 2 minutes.
- Add the tarragon.
- Let simmer another 30 seconds.
- Serve immediately.

CREAMY CHICKEN AND RICE SOUP BY PAULA DEEN
Found this in Paula Deen's magazine "Cooking with Paula Deen". It is a little different from some I have seen and quite tasty. She uses heavy cream (of course) but I have made it with the heavy cream and also with evaporated milk which isn't as heavy. I changed the recipe to use fresh vegetables when possible and some garlic.

- In a dutch oven, melt butter over medium high heat. Add carrots, onion, celery, and garlic. Cook for 4-5 minutes, stirring frequently or until vegetables are tender.

SKILLET TARRAGON CHICKEN
This delicious chicken and easy creamy tarragon wine sauce cook right on the stove top. People will think you went to culinary school to learn how to make something this good! Do not worry about the cream in here. It is only 1/4 cup divided between 6 people. Just enough to give you that smooth creaminess you have been craving! Oh MY this is so good! Steps:
- Sprinkle chicken with salt and pepper and dredge in flour. Set aside remaining flour.
- Heat 3 tablespoons of butter over medium heat in large skillet and brown chicken on both sides. Remove chicken and keep warm.
- Saute onion in same skillet until it begins to become clear.
- Add wine and cook until liquid is almost evaporated, stirring to loosen browned bits (deglaze) on bottom of skillet. Watch closely- this happens fast!
- Reduce heat to medium-low and stir in reserved flour until it becomes a thick paste.
- Add tarragon, chicken broth and the cooked chicken. Cover and cook until tender.
- Place chicken on a warm platter.
- Add remaining butter and heavy cream to the liquid that is in the skillet and heat through.
- Pour sauce over the chicken and garnish with a little more tarragon or some chopped fresh parsley or green onion if desired.
