I like to give my family a hearty start in the morning, especially when they have to eat in a hurry. These easy-to-make "cookies" are perfect for a breakfast on the run and really appeal to the kid in all of us. -Wanda Cox, Roscommon, Michigan

Steps:
- In a bowl, cream butter and sugar. Add egg and vanilla; mix well. Combine flour, baking soda and salt; add to creamed mixture and mix well. Stir in oats and wheat germ. Fold in cheese and bacon. Drop by rounded teaspoonfuls onto ungreased baking sheets. Bake at 350° for 15-17 minutes or until light brown.

AIR-FRYER BREAKFAST COOKIES
Steps:
- Preheat air fryer to 300°. Beat banana, peanut butter, honey and vanilla until blended. In another bowl, combine oats, flour, milk powder, cinnamon, salt and baking soda; gradually beat into banana mixture. Stir in dried cranberries., In batches, drop dough by 1/4 cupfuls 2 in. apart onto greased tray in air-fryer basket; flatten to 1/2-in. thickness., Cook until lightly browned, 6-8 minutes. Cool in basket 1 minute. Remove to wire racks., Serve warm or at room temperature. , Freeze option: Freeze cookies in freezer containers, separating layers with waxed paper. To use, thaw before serving or, if desired, reheat in a preheated 300° air fryer until warmed, about 1 minute.

TASTY BREAKFAST COOKIES
My family loves these little cookies for breakfast. All three of my children gobble them right up. They contain bacon, egg, cheese and corn flakes, yet are still sweet. They have a unique flavor, but we love them, and they are fairly quick to make! This recipe was sent to us by our college president's wife in a Christmas card several years ago and we've been enjoying it ever since.

Steps:
- Measure into bowl: flour, sugar and soda, and mix well.
- Add bacon, butter (or margarine) and egg.
- Mix until all ingredients are well-blended.
- Stir in corn flakes and cheese. (You may have to use hands to mix dough. It is very stiff.).
- Drop by teaspoon, 2 inches apart on ungreased cookie sheet. (I always use parchment paper!)
- Bake 13 - 15 minutes at 350 degrees. Cool slightly before removing.
- Note: If you choose to use bacon bits, be sure you use the real bacon bits, not Bacos!

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with parchment paper.
- In a large bowl, stir together the brown sugar, oats, flour, baking soda, baking powder, salt and cinnamon. Make a well in the center and pour in the canola oil, prune puree, water, egg whites and vanilla. Mix until well blended. Stir in the raisins, walnuts and apricots. Scoop cookies using an ice cream scoop, or roll into golf ball sized balls. Place cookies 2 inches apart onto the prepared cookie sheets and flatten to 1/2 tall with wet hands. These cookies do not flatten very much while baking.
- In the preheated oven, bake 8 minutes for chewy cookies 10 to 12 minutes for dry cookies. Cookies will not get crisp. Remove from cookie sheets to cool on wire racks.

- Preheat oven to 325°F (163°C). Line 2 large baking sheets with parchment paper or silicone baking mats. Set aside.
- Combine all of the ingredients into a large bowl of a stand mixer (or use a hand mixer). Mix until all of the ingredients are combined. The dough is thick and heavy.
- Using a 1/4 cup measuring cup, portion 1/4 cup mounds of cookie dough onto prepared cookie sheet. Use the back of a spoon to slightly flatten out into a cookie shape. (The cookies will not spread in the oven.)
- Bake for 16-18 minutes or until the edges are slightly brown. Cool cookies on the baking sheets for 10 minutes, then transfer to a wire rack to cool completely.
