Steps:

  • Combine celery, carrot, green pepper and onion in a slow cooker. Add broth, beer, salt and pepper. Cover and cook on LOW 5 to 6 hours.
  • After 5 or 6 hours, remove vegetables with a slotted spoon and process in a blender or food processor in batches until pureed and return to cooker with broth. Turn control to HIGH. Dissolve cornstarch in water; stir into pureed mixture. Add cheese gradually, stirring until blended. Cover and cook on HIGH 15 to 20 minutes. Serve hot.

Steps:

  • In a large saucepan over high heat, brin potatoes, 1 1/2 cups water, celery, leeks and bouillon granules to a boil.
  • Reduce heat to low, cover and simmer for 25 minutes or until potatoes are fork tender.
  • Remove from heat (DO NOT DRAIN) and mash mixture until smooth.
  • Gently stir in cheese until melted.
  • Stir in milk, beer (or water), worcestershire sauce, salt, dry mustard, and white pepper.
  • Stir over low heat until hot.

Steps:

  • In a 6 quart saucepan, brown bacon over medium heat until crisp, 10 to 15 minutes. Remove and discard all but 2 T of the fat.
  • In same pan, combine carrots, celery tops, leeks, potatoes, broth and water. Cover and heat to boiling over high heat. Reduce heat to medium, cover and cood 35-40 minutes until all vegetables are soft.
  • Reduce heat to low, using an electric immersion blender or hand mixer (on medium speed) beat together all ingredients until smooth, about 5 minutes. Discard any debris that collects on beaters.
  • Stir in ale, salt, nutmeg and pepper. Cover and cook over low heat 5 minutes. Just before serving stir in cheese and parsley.

Taverns are similar to sloppy joes, just not as "tomato-y;" I have made these for many church and work pot-lucks by increasing the quantities. For Zaar I cut the recipe down to 4 servings. I have had this recipe for many years and really don't have a clue where I first came across it. Works great in the Crock Pot.
