- For hot cocoa, in a small saucepan, mix cocoa, sugar and water until smooth. Bring to a boil; cook, stirring constantly, 2 minutes. Stir in milk until blended; transfer to a shallow bowl. Cool completely., For tiramisu, in a heatproof bowl of a stand mixer, whisk egg yolks and 1/2 cup sugar until blended. Place over simmering water in a large saucepan over medium heat. Whisking constantly, heat mixture until a thermometer reads 160°, 2-3 minutes., Remove from heat. With the whisk attachment of a stand mixer, beat on high speed until thick and pale yellow, about 5 minutes. Add mascarpone; beat on medium speed until smooth, scraping down sides of bowl as needed., In another bowl, beat cream until it begins to thicken. Add remaining sugar; beat until soft peaks form. Fold whipped cream into mascarpone mixture., To assemble, spread a third of the cream mixture into a 13x9-in. baking dish. Quickly dip half of the ladyfingers halfway into cooled cocoa; arrange over cream. Repeat layers. Spread with remaining cream mixture. Sprinkle with chocolate chips and cinnamon. Refrigerate, covered, at least 8 hours or overnight.

Steps:
- Stir espresso and 2 tablespoons Marsala wine together in a shallow bowl.
- Whisk egg yolks, 2 tablespoons plus 1 teaspoon sugar, and 1 tablespoon Marsala wine together in the top of a double boiler over simmering water, until thick, pale yellow, and creamy, 5 to 6 minutes.
- Whisk egg yolk mixture, mascarpone cheese, vanilla extract, and salt together in a bowl until completely smooth.
- Beat egg whites in a glass or metal bowl until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks. Gently stir and fold 1/2 the egg whites into egg yolk mixture; fold in remaining 1/2 egg whites.
- Place 1 heaping spoonful mascarpone mixture into a single-serving cup or glass. Dip 2 ladyfinger cookie halves briefly in espresso mixture and turn 3 to 4 times to coat. Place cookie halves in the bottom of the glass on top of mascarpone.
- Fill the glass halfway with mascarpone mixture. Dip 5 ladyfinger halves in the espresso mixture and place vertically along the inside of the glass, dipping and placing more ladyfinger halves as necessary to fit the glass. Place 2 dipped ladyfinger halves horizontally on top of the mascarpone mixture. Fill glass to the top with mascarpone mixture. Repeat for the second serving glass.
- Wrap both glasses in plastic wrap and refrigerate for at least 8 hours or overnight. Remove plastic wrap and dust tops with cocoa powder and grated chocolate.

- In a medium saucepan, whisk together the mascarpone cheese and the heavy cream. Add the milk and heat on low to medium heat, stirring frequently until heated through and completely smooth.
- Add the unsweetened cocoa powder to the mixture and stir again for 5 minutes, or until the cocoa completely dissolves.
- Pour hot coffee into each serving cup - the coffee should fill only the bottom quarter of the cup.
- Pour the chocolate/cheese mixture over the top of the coffee. Add the maple syrup and stir until completely mixed.
- Garnish with whipping cream, a splash of maple syrup, a sprinkle of coffee, a dusting of cocoa powder and a few chocolate chips.
- Serve immediately, for authenticity, serve with a lady finger on the side.
THE BEST TIRAMISU
Making this classic Italian dessert is surprisingly easy. We start the custard with a traditional Marsala-flavored zabaglione -- a cooked mixture of egg yolks and sugar. Then we lighten it with tangy mascarpone cheese, which provides just the right creamy, mousse-like texture. Once assembled, the ladyfingers soften sufficiently after 4 hours in the refrigerator, but if you can wait longer, the flavors will meld even more.

- For the mascarpone custard: Add the egg yolks, sugar and Marsala to a medium heatproof bowl and whisk to combine. Set the bowl over a medium saucepan of gently simmering water (do not allow the bowl to touch the water). Whisk constantly until the mixture is pale, hot to the touch and has doubled in volume, 4 to 6 minutes, scraping down the sides of the bowl occasionally with a rubber spatula. (This can be done with an electric mixer to speed up the process.) Remove from the heat and continue whisking until slightly cooled, about 1 minute. Whisk in the mascarpone cheese until combined. Refrigerate until ready to assemble.
- To assemble: Stir together 1 1/4 cups hot water, espresso powder and 3 to 4 tablespoons Marsala in a liquid measuring cup. Evenly divide the mixture between two medium bowls. Dust the bottom of an 8-by-8-inch baking dish with 1 teaspoon cocoa powder.
- Working one at a time, dip half of the ladyfingers into one bowl of the espresso mixture for 2 seconds per side, until soaked but not soggy. Arrange them over the cocoa powder in one layer, breaking up as needed to fill in any gaps. Pour any remaining liquid from the first bowl over the layer of ladyfingers. Spread half the mascarpone custard over the ladyfingers. Repeat the process with another layer of ladyfingers and the remaining bowl of espresso mixture, then spread with the remaining mascarpone custard.
- Cover with plastic wrap and refrigerate for at least 4 hours or up to overnight. Sift the remaining 1 tablespoon cocoa powder over the top just before serving.
THE BEST TIRAMISU
This recipe makes the absolute best tiramisu ever! It's so (deceptively) light and creamy, with a lovely coffee/amaretto taste. It gets rave reviews every time I make it! Best made a day ahead. The recipe comes from the ladyfinger cookie package. Cook time is approximate time to make coffee.

- Separate eggs, placing yolks in a large-sized bowl and whites in a medium-sized bowl.
- Beat egg whites until stiff peaks form; set aside.
- Beat egg yolks and sugar together until creamy and golden yellow.
- Add mascarpone and whip until fully incorporated.
- Fold in beaten egg whites, and set mixture aside.
- Get out your 13 x 9 glass dish (or serving dish of your choice).
- Pour coffee and amaretto into another dish to dunk the cookies.
- VERY, VERY QUICKLY dunk enough cookies (one at a time) to line the bottom of the serving dish.
- The cookies absorb liquids very rapidly so you don't want to keep them in the hot coffee - just dip them in and take out immediately.
- Once the bottom of the serving dish is covered, spread 1/2 of the mascarpone mixture over the cookies.
- Repeat the cookie step, then spread on the remaining mascarpone mixture.
- Refrigerate for several hours to allow everything to set and to let the flavours develop.
- Dust with cocoa. (If it will be in the fridge overnight, you may wish to save the cocoa dusting until the next day.)
- Ideally, the tiramisu should be made the day before you wish to serve it, and it lasts several days if kept refrigerated.

- In a small bowl, dissolve the coffee granules in hot water; set aside about 1 tablespoon in a small cup.
- Cut each ladyfinger crosswise into quarters.
- Brush the remaining coffee mixture over the cut sides of the ladyfingers; set aside.
- In a large bowl beat 3/4 cup condensed milk and the mascarpone or cream cheese (if using).
- Add in 1-1/4 cups whipping cream, 1-1/2 teaspoons vanilla and the 1 tablespoon reserved coffee mixture; beat until soft peaks form.
- Fold in 1/2 cup chocolate chips.
- In a heavy saucepan over low heat, melt remaining 1/2 cup chocolate chips with the remaining condensed milk.
- In 8 tall dessert glasses or parfait glasses, layer mascarpone mixture, chocolate mixture and the ladyfinger pieces, beginning and ending with the mascarpone mixture.
- Cover and chill for a minimum of 4 hours.
- Just before serving, in a medium bowl beat 1 cup whipping cream with 2 tablespoons sugar until soft peaks form.
- To serve spoon/divide the whipped cream over the top of each dessert.
- Grate chocolate over the whipped cream.
