TURKEY QUESADILLAS

Loaded with garden-fresh vegetables, this Mexican specialty is sure to be popular with the whole family. Plus, it's a snap to prepare on a busy weeknight.

Turkey Quesadillas image

Steps:

  • In a large nonstick skillet, cook the turkey, onion and garlic over medium heat until meat is no longer pink; drain. Add zucchini, salsa, corn, red pepper and chilies. Reduce heat; cover and simmer until vegetables are tender. Stir in seasonings., For each quesadilla, place one tortilla in an ungreased nonstick skillet. Sprinkle with 1/4 cup cheese. Top with 1/2 cup filling, then sprinkle with another 1/4 cup cheese. Cover with another tortilla. Cook over medium heat, carefully turning once, until lightly browned on both sides and cheese begins to melt. Cut into eight wedges.

1 cup chopped red onion
1 to 2 garlic cloves, minced
2 cups julienned zucchini
1 cup salsa
1 cup frozen corn
1 cup julienned sweet red pepper
1 can (4 ounces) chopped green chilies
2 tablespoons minced fresh cilantro
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
8 flour tortillas (8 inches)
2 cups shredded reduced-fat Mexican cheese blend

Steps:

  • In a small bowl, combine salad dressing and mustard; spread over 1 side of each tortilla. Place tortillas, spread side up, on a griddle coated with cooking spray., Layer cheese, avocado and turkey over half of each tortilla. Fold over and cook over low heat for 1-2 minutes on each side or until cheese is melted. Garnish with red pepper if desired.

Steps:

  • In medium saute pan, add 2 ounces olive oil, onions, peppers and saute until translucent. Add turkey and brown on all sides. Season with salt and pepper.
  • In a separate pan, add 2 ounces of oil, and fry potatoes in oil until crispy. On a serving plate layer the turkey mixture on top of the crispy potatoes.
  • Top with diced roma tomatoes and fresh squeezed lime juice.

Turkey Hash Quesadillas image

Steps:

  • Preheat oven to 500*. Simmer potatoes in a pot of boiling salted water until barely tender (5 minutes). Drain and set aside.
  • In a heavy skillet,cook the bacon and onion in 1/2 tablespoon oil over medium heat, stirring, for 5 minutes. Add the potatoes and cook, stirring, until crisp and golden (should take about 5 minutes).
  • Cool slightly, and stir in turkey, cheese and parsley.
  • Put 2 tortillas on a baking sheet and brush with some of the remaining olive oil. Turn tortillas over and top each with half the turkey hash, spreading out evenly. Cover with remaining 2 tortillas and brush tops with remaining oil.
  • Bake in a preheated 500* oven until golden, about 8-10 minutes.
  • To serve, cut into wedges and top with cranberry sauce.

Steps:

  • Place 2 tortillas on your board. Spread 1 with cranberry sauce and set aside. Sprinkle the cheese over the other one and crumble the stuffing on top. Add the green beans, turkey, and jalapeno peppers. Pick up the first tortilla and place it cranberry side down onto the filled one. Press gently but firmly to keep the quesadilla together.
  • Spray a nonstick skillet with cooking spray and put it over medium heat. Place the quesadilla in the skillet and cook until the bottom is lightly browned and the cheese is melted, about 2 minutes. Flip the quesadilla and cook it on the other side for another 2 minutes. Slide it onto a cutting board, cut it into wedges, and serve.

Cook, stirring occasionally, until turkey is fully cooked through, about 10 to 12 minutes. Stir in tomato paste and broth and cook 1 to 2 minutes.
  • Distribute ground turkey mixture on top of cheese (about half a cup per tortilla). Then, sprinkle remaining cheese on top of ground turkey. Fold over each tortilla so it's a half-moon shape.Note: If your tortillas are smaller or larger than the size used here, the quantity you yield may vary.
