AUTHENTIC TURKISH DONER KEBAB
A very popular take-out especially after a night out at the pub. This favorite is so, so tasty--I'm sure once you try it, you'll certainly want to make more! Serve with warmed (lightly toasted) pita bread, chili sauce, and a salad of shredded cabbage, carrot, onion, and sliced cucumber. Also great to add as a topping for pizzas. Great to make in advance, slice and freeze.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine flour, oregano, salt, garlic powder, onion powder, Italian seasoning, black pepper, and cayenne pepper in a large bowl. Add ground lamb and thoroughly knead with the flour mixture until thoroughly mixed together, about 3 minutes.
- Shape the seasoned ground lamb and place into a loaf pan; set on top of a baking sheet.
- Bake in the preheated oven, turning the loaf halfway to ensure even browning, about 1 hour and 20 minutes.
- Wrap loaf in aluminum foil and let rest, about 10 minutes. Slice as thinly as possible to make the doner kebab pieces.

This is not quite the chicken doner from the restaurants but it's quite easy to make and satisfy my cravings. You must use fresh chicken and not use chicken that has been previously frozen. You will need to prepare the chicken overnight and freeze. I had trouble slicing my chicken with an electric knife so I would defrost it a little longer then 45 minutes. Steps:
- Place baking paper over chicken breast and using a meat tenderiser, hammer the chicken gentle to make it slightly thinner. Make sure you don't tear it, but it will not matter if you do. Repeat this with the other chicken breast. Seasoned the two chicken breast with salt and pepper and set aside.
- In a bowl add the onion, oregano, olive oil, salt and pepper into the ground chicken. Knead and give it a round shape, then place in the middle of the two pieces of chicken breast.
- Cover in plastic wrap and leave in the freezer overnight.
- The next day remove them from the fridge 45 minutes before cutting. Use a knife, electric knife or meat cutter to shred/slice chicken.
- Spray small amount of olive oil spray in a warm non-stick pan and cook chicken on both sides until slightly brown (be careful not to over-fry).
- To make the yoghurt sauce, mix all the sauce ingredients in a separate bowl.
- Serve it like a burger using Turkish bread rolls or as a wrap with pita bread. With lettuce leaves, tomato slices, onion slices and top with a generous amount of yoghurt sauce.

- Remove chicken thighs from the refrigerator and place in a medium-sized bowl. Zest lemon over top and add juice too. Coat with olive oil, yogurt, salt, and Turkish Chicken Seasoning. Mix to coat chicken, either with a spoon or your hands. Marinate chicken for 30 minutes-24 hours. If you're cooking it within the hour, leave the marinating chicken outside of the fridge.
- When ready to cook, line a rimmed baking sheet that is big enough so to perch metal skewers on top, with foil. My baking sheet and skewers are about 16 inches long.
- Thread pieces of marinated chicken onto 2 long metal skewers and bake at 400 degrees until internal temperature reaches 165F (about 30 minutes). Flip chicken once during cooking, using tongs or hot pads. Chicken may also be grilled. If you like, broil chicken for the last 5 minutes of cooking for crispy yummy bits!
- Remove from skewers and thinly slice for use in a sandwich wrap or over a salad. Serve with tahini dressing with parsley (linked above).
