Steps:

  • Put the salmon in a bowl, pour over the lime juice and leave the salmon to 'cure' for 5 mins. Meanwhile, mix all the spices together with the sugar. Lift the salmon out of the lime juice and roll in the spices so it's completely coated.
  • Heat grill to high. Grease a baking tray, then sit the salmon, flesh-side up, on the tray. Grill for 5 mins, until the salmon is cooked through and the edges are starting to blacken. While the salmon is cooking, gently mix all the salsa ingredients together with the roughly chopped coriander. When the fish is cooked, serve with the salsa, some rice and the coriander sprigs.

GRILLED CAJUN SEAFOOD BOIL

Nothing says summertime better than a good old-fashioned seafood boil from Joy Wilson of Joy the Baker. This version removes the boil and takes it straight to the grill, creating personal pouches loaded with shrimp, potatoes, sausage and corn. It's simple and fun for backyard gatherings, and Reynolds Wrap® Heavy Duty Foil makes cleanup a breeze!

Steps:

  • Heat a grill to about 375 degrees F.
  • Add potato pieces to a large pot of water and bring to a boil. Simmer for 10 minutes, just to jump-start the cooking process. Drain.
  • Arrange 4 (12x18-inch) sheets of Reynolds Wrap® Heavy Duty Aluminum Foil on a clean work surface.
  • Divide the shrimp, slightly cooked potatoes, kielbasa and corn atop the 4 pieces of foil, piling in the center. Add 1 tablespoon butter to each pile. Drizzle each with 1 tablespoon olive oil, sprinkle with Worcestershire sauce and sprinkle generously with Creole seasoning. Squeeze a lemon wedge over each pile and add the rind to the mixture. Sprinkle with black pepper.
  • Wrap each piece of foil into a tightly sealed pouch. Place on the grill. Cover. Allow to cook and steam for 15 to 18 minutes until the shrimp and potatoes are cooked through.
  • Serve by carefully unwrapping the foil and serving with slices of bread and hot sauce.

Steps:

  • Preheat Grill to 500 degrees on High.
  • Slice salmon fillet into five equal pieces.
  • Place salmon pieces on a sheet of aluminum foil large enough to leave 3" excess all around.
  • Coat salmon with 1 teaspoon olive oil (I prefer using a spray bottle for my olive oil, approximately 5 sprays).
  • Sprinkle same side of salmon with half the spices and rub into fish.
  • If using optional sauce, spread all of the sauce atop spice and rub into fish.
  • Flip the salmon pieces over and coat other side with 1 teaspoon olive oil and remaining spices, rub into fish.
  • Fold edges of foil up and slide onto hot covered grill cooking on high for about 7 minutes. Carefully flip each piece and continue to grill for 5-6 more minutes.
  • Carefully move to serving platter, enjoy hot off the grill with a fresh garden salad.

Steps:

  • This approach with salmon works equally well on fresh halibut or sea bass. We serve the resulting fish hot or at room temperature either as the center of the plate or as part of a salad. If you're using salmon, try marinating and grilling the skin separately to use as a garnish.
  • Season salmon with salt and set aside.
  • Combine marinade ingredients, except lemon slices, in a small saucepan and bring to a boil. Remove from heat and allow to cool to room temperature. Add lemon and pour cooled marinade over fish and marinate refrigerated for 2 to 4 hours. Turn fish occasionally.
  • To serve: Grill or broil on both sides until just done, approximately 4 to 5 minutes per side. Be careful not to overcook. Salmon should still be translucent in the center. Serve with Soba Noodle Salad on the side.

4 (5-ounce) salmon fillets
1/2 teaspoon salt
1/4 cup soy sauce
1/4 cup sake or dry white wine
1/4 cup mirin
2 tablespoons sugar
3 tablespoons chopped green onion
3 tablespoons chopped fresh ginger
1 small lemon, thinly sliced

CAJUN SALMON FILLETS

This is almost the only way I eat salmon. Note: I find this dish spicier when baked than when grilled. I use a frozen wild whole salmon fillet cut into about 6 pieces; feel free to use fresh salmon or whatever cut you like. If using salmon steaks, I would brush the seasoning on both sides.
