HEALTHY SLOW-COOKER TEX-MEX SLOPPY JOES

Steps:
- Spray 3 1/2- to 4-quart slow cooker with cooking spray; set aside. Pour chili beans into medium bowl. With potato masher or fork, mash about half of the beans; set aside.
- In 12-inch skillet, cook beef, green and red bell peppers, onion and jalapeño chile over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
- Pour beef mixture into slow cooker. Add beans, ketchup, chili powder and pepper. Stir to thoroughly combine. Cover; cook on Low heat setting 2 1/2 to 3 hours or until heated through (165°F). Stir in lime juice.
- Divide beef mixture among buns (about 1/2 cup each). Serve immediately.

A twist on your regular sloppy joe sandwich. I haven't made this since the kids won't eat the chilis, but I'm saving it for a day for dh and I to try for lunch :)

Steps:
- In large skillet, heat oil over medium heat. Add diced onion and cook 5 minutes. Increase heat to medium-high and add ground beef and chili powder.
- Cook 5 minutes, until meat is no longer pink.
- Dran fat.
- Stir in tomato sauce, ketchup, green chiles, sugar, salt and pepper. Increase heat to high ; simmer 5 minutes, until thickened.
- Serve on soft hamburger buns with sweet pickles.

- Heat oven to 375°F. Spray cookie sheet with cooking spray. Unroll both cans of dough on work surface; press into two 12x8-inch rectangles. Cut into total of 8 rectangles.

- In a mixing bowl, combine Worcestershire sauce, ketchup, brown sugar, mustard, paprika, chili powder, cumin, salt, pepper, coriander, oregano, and salsa. Whisk or stir to mix well, then set aside.
- Heat the olive oil in a large skillet over MED heat and add the onion, green pepper and jalapeño. Cook until onion is soft and translucent.
- Add beef to the skillet and cook until beef is browned and cooked through, crumbling the beef as it cooks. Drain beef and return to the skillet.
- Stir in combined sauce and heat to a high simmer. Reduce heat to MED LOW and simmer for about 1-15 minutes, until sauce has thickened to your liking.
